Simple and Good Spinach and Egg Air Fryer Breakfast: Low Carb and Great For Diabetics
This breakfast main dish is about as easy as you can get, and it's really good for something so simple. The spinach and a bit of bacon and other seasonings flavor the egg. A little cheese provides extra protein, some saltiness, and a nice crust to the egg. The dish doesn't really require a recipe (although I've included one below), and it's fast, nourishing, and won't weigh you down with a lot of calories or carbohydrates. The spinach and egg dish also makes a simple and filling lunch or a light dinner. Enjoy!
Air Fryer Spinach and Egg Breakfast -- Serves 1
Handful of washed spinach
Sprinkle of garlic powder
Sprinkle of lemon pepper
Teaspoon or two of chopped green onions
1 teaspoon of bacon crumbles
1 large egg
2 teaspoons of grated Parmesan cheese
1 teaspoon of shredded cheddar, Colby-Jack, etc., cheese
Spritz a small pie tin, large ramekin, or ceramic dish (I use a ceramic dish that's a few inches in diameter) with non-stick cooking spray. Put the spinach into the dish (squish it down a little to make it fit, it won't hurt it). Sprinkle the spinach with the garlic powder, lemon pepper, chopped onions, bacon crumbles, and a teaspoon of the Parmesan. Break the egg over the spinach mixture. Sprinkle on the teaspoon of shredded cheddar, then the remaining Parmesan. Put the filled dish in your air fryer basket, put the basket in the air fryer, and air fry the spinach and egg at 360 degrees for 4-7 minutes or until the egg is done the way you like it (runny or harder) and the cheeses are nicely browned.
