Simple Air Fryer Chocolate Almond Cookies--No Wheat Flour

These are simple, tasty cookies that require no wheat flour. The cookies use almond flour or meal and emerge from the air fryer crispy on the edges, bendable in the middles, and nicely crackled on top. As the cookies age a day or three (if they're around by then), the cookies become more "snap-like," because of the low amount of fat in them. I like them either way--soft or harder. The cookies are great with tea or coffee, fruit, and ice cream and sorbets. They also take minutes to mix up and bake in your air fryer. Enjoy!

Simple Air Fryer Chocolate Almond Cookies -- Makes about 10


1 cup of almond flour or meal

1/2 cup of powdered sugar

2 tablespoons of cocoa powder (unsweetened)

1/4 teaspoon of baking soda

1/8 teaspoon of salt

1 egg white

2 tablespoons of canola oil

1/2 teaspoon of almond extract

Sugar to sprinkle (about 1/4-1/2 teaspoon per cookie)


Cut pieces of baking parchment to fit your air fryer basket. In a medium bowl, mix the almond meal, sugar, cocoa powder, baking soda, and salt. Stir in the egg white, oil, and almond extract until thoroughly incorporated. Drop several 1 1/2 tablespoon mounds of dough on each of the parchment sheets, spacing the mounds at least an inch apart. With damp fingers, flatten the mounds to about 1/2-inch thick and sprinkle each mound with a little sugar. Put a dough-topped piece of parchment in your air fryer basket, put the basket in the air fryer, and air fry the cookies for 8-10 minutes or until just set and crackled on top. Remove the cookies from the air fryer basket to cool, and repeat the cooking process with the remaining dough.
