Quick, Easy Air Fryer Cherry Breakfast Quiches
These simple little breakfast quiches bake in minutes in your air fryer. They are a variation of air fryer breakfast bakes I've made many times (check out the bananas foster version), and, although the quiches are sweet from the cherries, they're also reasonably nutritious with cottage cheese and quick oats included. The quiches are a great way to use up left over cherry pie filling. I use a Pyrex measure to mix up the batter, which saves washing extra dishes and allows me to make a nice breakfast in minutes and commune more quickly with my morning coffee. I like breakfast, but I'm not keen on a major production, so these quiches are great. They're fast to make, sweet, full of protein, and quite tasty! And if you don't have cherry pie filling, feel free to substitute apple, blueberry, or whatever you do have.
Air Fryer Cherry Breakfast Quiches -- Makes 2 Small Quiches
1/4 cup of cherry pie filling, divided
1/4 cup of cottage cheese
1 large egg
1/4 cup quick oats
2 teaspoons of sugar (optional)
1/2 teaspoon of vanilla
Dash of cinnamon, optional
Spritz 2 small ramekins with non-stick cooking spray and put about a tablespoon of cherry pie filling in the bottom of each one. In a small bowl or measure, combine the cottage cheese, egg, quick oats, sugar (if you want a sweeter quiche--I don't usually add it) and vanilla and mix them well. Divide the mixture between the two ramekins, covering the cherry filling. On top of the mixture in each ramekin place another tablespoon or so of cherry pie filling. Dust the top of the cherry pie filling with a little cinnamon, if you'd like. Put the ramekins in the air fryer basket and set the temperature at 320 degrees. Cook the quiches for 10-15 minutes or until puffed and firm. Let the quiches stand a few minutes before serving them. You can serve the quiches in the ramekins or remove them carefully with a fork, keeping them upright and placing them on a plate.
