Quick Air Fryer Egg in a Tomato Breakfast
This is a great, high-protein, low-carbohydrate breakfast that's filling, inexpensive, and good. It's quick to make in the air fryer. The dish also makes a nice lunch or even a light dinner with a salad. There isn't much to making the dish, and you don't really need much of a recipe, even though I'm providing one anyway! You simply hollow out a tomato, whip together an egg with a few more ingredients, pour the egg mixture in the tomato, and air fry the tomato/egg for 5-7 minutes. What comes out of the air fryer is an amazing, savory egg dish that will wake up your taste buds and make your tummy quite happy. The dish is easy enough for a weekday but also special for a weekend. Quick Air Fryer Egg in a Tomato Breakfast -- Serves 2
1 large tomato, cored and split in half
2 large eggs
2 tablespoons of milk
Pinch of pepper and salt
1-2 tablespoons chopped green onions
1-2 teaspoons of fresh chopped basil or 1/2 teaspoon of dried basil
1 tablespoon of grated Parmesan cheese
2 tablespoons of shredded Italian blend cheese
Spritz two mini pie dishes well with non-stick cooking spray. Hollow out each half of the tomato using a spoon and reserving the juices/insides of the tomato in a small bowl or measure (I uses a pint Pyrex measure). Add the eggs, milk, pepper, and salt to the tomato juice mixture and whisk everything together well Stir in the green onions, basil, and Parmesan cheese. Place one hollowed out tomato half in each pie dish (you may want to cut off a small piece from the bottom part of the tomato to make it sit flat). Pour half of the egg mixture into each tomato half (it's okay if some runs out and around the tomato). Sprinkle half of the shredded Italian cheese on top of the egg mixture in each tomato half. Spritz the cheese with a little non-stick cooking spray or olive oil. Put the filled dishes in your air fryer basket and air fry the tomatoes and eggs at 360 degrees for 5-7 minutes or until the eggs are set and the cheese is golden.
