Need Cookies Fast? Make Air Fryer Pistachio Cookies

If you're in need of a quick dessert or just want a cookie fix, try these simple Air Fryer Pistachio Cookies. The cookies are different, not your run-of-the-mill chocolate chippers (not that I'd ever turn down chocolate chip cookies, either!), and they are great alone or alongside fruit or ice cream. The cookies are not green, but they are flecked with small bits of pistachio nuts. The cookies also get a bit of texture from some oats. The cookies are a little crispy on the edges and soft in the centers. The cookies are sweet but not very. The pistachios contribute the flavor that shines through the cookies. Enjoy!

Air Fryer Pistachio Cookies -- Makes about 12


3 tablespoons of melted butter

1 tablespoon of canola oil

1/4 cup of sugar

1/2 teaspoon of vanilla

1 large egg

1/2 cup of flour

1/4 teaspoon of baking soda

1/8 teaspoon of salt

1/4 cup of quick oats

1/2 cup of chopped shelled, roasted pistachio nuts


Cut pieces of baking parchment to fit your air fryer basket. In a medium bowl combine the butter, oil, sugar, vanilla, and egg and beat them well. Stir in the flour, baking soda, salt, and oats until combined. Fold in the pistachio nuts. Drop several 1 1/2-inch mounds of dough onto each parchment sheet, spacing the mounds at least an inch apart. Flatten the mounds slightly with your fingers. Put one dough-topped piece of parchment in your air fryer basket, put the basket in the air fryer, an air fry the cookies at 320 degrees for about 10 minutes or until golden brown. Remove the cookies to cool and repeat the cooking process with the remaining dough or refrigerate the remaining dough, well wrapped, to bake another day.
