These little cakes are small but good! They are light, moist, and gently flavored with almonds. You don't need a lot of equipment for these cakes, and you can mix them up quickly. They also cook in your air fryer in 15-20 minutes, plenty of time to whip some cream and slice some berries to go with the little cakes. I use whatever berries I have on hand--strawberries, raspberries, blueberries, blackberries---all are good. You also can frost the almond cakes or dust them with confectioner's sugar for an easy dessert. If you like ice cream or sherbet, slice the cakes in half and plop a little softened ice cream or sherbet on the bottom half and then replace the top. Enjoy!
Air Fryer Mini Almond Cakes -- Makes 4
1/4 cup of sugar
1 large egg
2 tablespoons of canola oil
1 tablespoon of water or milk
1/4 teaspoon of almond extract
1/4 cup of flour
1/4 up of almond flour
1/2 teaspoon of baking powder
1/4 teaspoon of salt
Whipped cream and strawberries (optional but really good)
Line four ramekins or small custard cups with cupcake liners and spritz the liners with non-stick cooking spray. In a medium bowl, whisk together well the sugar, egg, oil, water, and almond extract. Whisk in the flour, almond flour, baking powder, and salt until incorporated. Divide the mixture among the four lined ramekins. Put the ramekins in your air fryer basket, put the basket in the air fryer, and air fry the cakes at 320 degrees for 15-20 minutes or until lightly browned. Remove the ramekins from the air fryer basket and let them cool a few minutes. Then tip the almond cakes out of the ramekins and let them cool and top with whipped cream and berries or frost them. Or serve the cakes warm with ice cream. Yum!
