This tuna pot pie is a little different but still familiar comfort food. It's easy to make, won't take you long to put together, and bakes in about 30 minutes. The pot pie has all the usual pot pie ingredients--celery, onions, carrots, and mushrooms--but, in this version, tuna, not chicken is the key ingredient. I use the inexpensive canned chunk light tuna, which works just fine, but you can use a fancier albacore tuna, if you'd like. The pot pie gets a cheesy cornbread topping that's simple to mix up and doesn't require any eggs. Low in fat and full of protein and fiber, the pot pie (in moderation, as always) is great if you're on a diabetic diet or want to "eat healthy." You won't need much alongside the pie. A simple salad would be plenty. Enjoy!

Tuna Pot Pie (Diabetic Friendly) -- Serves 4+


1/4 cup of chopped celery

1/2 medium onion, chopped (1/2-3/4 cup)

1 cup of shredded carrot (from a bag is fine)

4 ounces of sliced mushrooms

1 tablespoon of chopped fresh dill (or 1/2 teaspoon of dried dill)

1 teaspoon of dried parsley flakes (or use 1 tablespoon of chopped fresh parsley)

1/2 teaspoon of salt, divided

1/4 teaspoon of pepper

1/2 teaspoon of garlic powder

4 tablespoons of white whole-wheat flour

1 cup of very ,hot water

1 1/2 teaspoons of reduced sodium chicken base (I use "Better Than Bullion")

12 ounce can of chunk light tuna, drained (you can use the kind in water or oil)

1 tablespoon of cornstarch mixed with 1 tablespoon of water

1/3 cup of light sour cream

Cornbread topping (see below)


Spritz an 8-inch square pan with non-stick cooking spray (or line the pan with aluminum foil or an aluminum foil pan and spritz the foil or pan with cooking spray for easy cleanup). In a large microwavable bowl or measure combine the celery, onion, carrot, and mushrooms and add a tablespoon of water. Microwave the mixture for 3-4 minutes or until the vegetables soften. Stir in the dill, parsley, 1/4 teaspoon salt, pepper, garlic powder, and flour. Let the mixture sit for a few minutes, stir it again, and then stir in the hot water, chicken base, drained tuna, and remaining 1/4 teaspoon of salt. Microwave the mixture for 3-4 minutes, then stir in the cornstarch/water mixture. The mixture should thicken, but you can microwave the mixture another minute to thicken it a bit more, if necessary. Stir in the sour cream. Pour the mixture in the prepared pan. Prepare the cornbread topping (see below) and dollop portions on top of the tuna mixture.

Air Fryer: Air fry the pot pie at 320 degrees for about 30 minutes or until the cornbread topping is golden.

Oven: Preheat the oven to 350 degrees and bake the pot pie for 30-35 minutes or until the cornbread topping is golden.

Cornbread Topping


1/2 cup of cornmeal (I use yellow)

1/2 cup of white whole-wheat flour

1 1/2 teaspoons of baking powder

1/4 teaspoon of salt

3/4 cup of milk

2 tablespoons of canola oil

1 tablespoon of milled flax seeds

1/2 cup of shredded cheddar cheese (I use thick cut mild or medium cheddar)

1 tablespoon of grated Parmesan cheese


In a large bowl mix together the cornmeal, white whole-wheat flour, baking powder, and salt. Add to the bowl the milk, canola oil, and flax seeds and stir them in until everything is combined. Stir in the cheeses. Dollop bits of the batter on top of the tuna pot pie filling.
