Make Puffy Almond Cookies in Your Air Fryer

You can make a small batch of almond cookies in minutes using your food processor and air fryer. The cookies are a little crispy on the outside and soft and pillowy on the inside. They have plenty of almonds in them and also have a little flour for structure. The cookies are sweet but only mildly so, and they are perfect alongside fruit, ice cream or just with your tea and coffee. I sometimes make a few and stash the rest of the dough in the refrigerator, so that I can have a fresh batch of cookies later in the week (and to limit immediate temptation). Enjoy!

Air Fryer Puffy Almond Cookies -- Makes 9-12


3/4 cup of slice almonds

1/2 cup of flour

1/3 cup of sugar

1/2 teaspoon of baking powder

1/8 teaspoon of salt

1/4 teaspoon of cinnamon

2 tablespoons of very soft or melted butter

2 tablespoons of canola oil

1/4-1/2 teaspoon of almond extract (depending on whether you want a stronger flavor)

1 large egg

Sugar to sprinkle (optional)


Put the almonds and flour in the food processor bowl and pulse them together until the almonds are mostly ground. Add and pulse in the sugar, baking powder, salt, and cinnamon. Add the butter, canola oil, almond extract, and egg to the bowl and pulse about half a dozen times or until all the ingredients are blended together well. Cut small pieces of baking parchment to fit your air fryer basket. Drop 1 1/2 tablespoons of dough (two or three to each sheet), spacing the dough mounds an inch or two apart. Flatten the dough rounds slightly with damp fingers and sprinkle them with a little sugar if you'd like. Put the dough-topped parchment into your air fryer basket, put the basket in the air fryer, and air fry the dough at 320 degrees for about 10 minutes or until the cookies are puffed and a deep golden brown. Remove the cookies on their parchment to cool and repeat the cooking process with the remaining dough or refrigerate some of the dough to bake later.
