These cookies are quite good and addictive, even though they are missing that key chocolate ingredient. My husband for some strange reason doesn't especially like chocolate chip cookies (that's okay, I'll eat his). So, I make him these pistachio and white baking chip treats instead. The cookies have edges that are a little crispy and centers that are more chewy. The pistachio nuts give the cookies a special taste, and the white chips provide a creamy sweetness. The dough for the cookies mixes up in minutes, and you can air fry the cookies in about 10 minutes. I usually make only a half dozen cookies at a time and stash the remainder of the dough, wrapped in plastic, in the refrigerator so we can have fresh, warm cookies another day. If the dough is cold from the refrigerator, just add a little more air frying time. The cookies are perfect with a cup of tea or coffee or a big glass of milk. Enjoy!
Air Fryer Pistachio and White Chip Cookies -- Makes 15-18
3 tablespoons of butter, melted
3 tablespoons of canola oil
1/3 cup of sugar
1 tablespoon of milk
1 large egg
1/4 cup of dark brown sugar
1 teaspoon of vanilla
1/4 teaspoon of salt
1/4 teaspoon of baking soda
1/4 teaspoon of baking powder
1 1/4 cups of all-purpose flour
1/2 cup of shelled pistachio nuts (chopped if you want, although I don't bother)
1/2 cup of white baking chips
In a medium bowl or measure combine the butter, oil, sugar, milk, egg, brown sugar, and vanilla. Stir in the salt, baking soda, baking powder, and flour until combined. Fold in the pistachio nuts and baking chips. Cut small pieces of baking parchment to fit your air fryer basket. Drop two or three 1 1/2 tablespoon scoops of dough onto each piece of parchment, spacing the dough mounds at least an inch apart. Flatten the dough mounds slightly with your fingers/hand. Put a dough-topped piece of parchment in your air fryer basket, put the basket in the air fryer, and air fry the dough at 320 degrees for about 10 minutes or until the cookies are a light golden brown. Remove the cookies from the air fryer basket to cool and repeat the cooking process with the remaining dough or wrap the remainder of the dough and refrigerate it to cook another day.
