Make Honey-Lemon Pork Chops With Sweet Potatoes in Your Air Fryer

These pork chops are simple to make, quick, and delicious. They also are reasonably inexpensive and make and don't require hard-to-find ingredients. I usually season the pork chops early in the day--after lunch--and then leave the chops in the refrigerator until dinner time. The seasonings have more time to sink in during the stint in the refrigerator, but the process isn't essential, and the pork will be good whether you go that route or not. I also cook the chops with the sweet potatoes underneath, but, if you don't like sweet potatoes or don't have any, leave them out. Life will go on. The chops also would be good with rice or pasta. The air fryer does a great job on the chops, just don't over cook them. The chops should register 140 degrees in the center, which means they'll cook in minutes. How do the pork chops taste? They're savory, sweet, and a bit tangy from the coriander and lemon. They're good! Enjoy!

Air Fryer Honey-Lemon Pork Chops With Sweet Potatoes -- Serves 2


1 large sweet potato, peeled and cut into wedges about 1/2-1-inch thick

2 teaspoons of olive oil

1/2 teaspoon of onion powder

1/4 teaspoon of cinnamon

2-3 boneless pork chops, about 1-inch thick

1/4 teaspoon of salt and pepper

1/2 teaspoon of coriander

2 teaspoons of flour

2 tablespoons of honey

2 tablespoons of lemon juice

1 tablespoon of butter

Spritz or rub the basket of your air fryer with olive or canola oil (don't use non-stick cooking spray, because it will gum up your basket). In a large bowl, combine the sweet potato wedges, olive oil, onion. Pat the pork chops dry with a paper towel. On both sides, season the chops with the salt, pepper, and coriander. Sprinkle the flour on the chops (both sides). You can refrigerate the potatoes and pork chops to cook later in the day or cook them immediately.


When you're ready, put the sweet potatoes in the air fryer basket, put the basket in the air fryer, and air fry the sweet potatoes at 400 degrees for 10 minutes. While the potatoes are cooking, in the same bowl you used for the potatoes, combine the honey and lemon juice. Microwave the mixture for two minutes, stirring it mid-way through (it will boil up, so you need to use a large bowl/measure--I use a quart-sized Pyrex measure). Add the butter to the honey-lemon juice mixture and stir it in well. Set the mixture aside.


After the potatoes have their 10-minute start, it's time to add the pork chops. If you have a rack for your air fryer, place it over the sweet potatoes in your basket and spritz the rack with a little olive oil (if you don't have a rack, just lay the pork chops on top of the sweet potatoes and carry on with the recipe). Place the seasoned pork chops on the rack and spritz them with a little olive oil. Put the basket back in the air fryer and air fry the chops for six minutes. Flip them over and spritz the side of the chops that's now on top with a little olive oil. Put the basket back in the air fryer and air fry the chops for another six minutes or until the chops reach an internal temperature of 140 degrees. Remove the chops from the air fryer, cover them loosely with aluminum foil, and return the sweet potatoes to the air fryer for a few minutes until they are soft and a bit browned on the edges. Serve the sweet potatoes and pork chops with the honey-lemon sauce spooned/poured over them.
