Make a 15-Minute Air Fryer Dinner: Date-Orange Glazed Salmon With Walnuts (Diabetic Friendly)

This is a great main dish when you want something special but don't have much time. The salmon takes minutes to prepare and air fries in 10-15 minutes. The fish is "heart healthy" and loaded with nutrients. It also tastes great. The date paste and orange juice mixture is a little out of the ordinary and complements the rich fish well. You can buy date paste or make your own. Given the small amount needed for the recipe, if you don't have date paste, I recommend soaking a couple of dates in very hot water for a few minutes, draining off all but a tablespoon or so of water and just mashing the dates with a fork. Voila! You have date paste. We especially like the walnuts on top of the fish, as the nuts provide extra flavor and crunch (as well as nutrients). The salmon is great served with a salad and/or green vegetable and brown rice or quinoa. Enjoy!

Air Fryer Date-Orange Glazed Salmon With Walnuts (Diabetic Friendly) -- Serves 4


16 ounce salmon filet

1 - 2 tablespoons of date paste

2 tablespoons of orange juice

1/2 teaspoon of grated orange zest

1/8 teaspoon of salt and pepper

1/8 teaspoon of onion powder

1/4 cup of broken or chopped walnuts

Parsley to garnish, optional


Cut a small piece of aluminum foil to fit your air fryer basket and an inch or two up the sides of the basket. Spray the foil with non-stick cooking spray. Pat the fish dry with a paper towel and place it, skin side down, on the foil. In a small bowl or cup combine well the date paste, orange juice, orange zest, salt, pepper, and onion powder. Spoon the mixture over the top of the fish, trying to cover all the fish with some of the mixture. Put the basket with the fish in it in your air fryer and air fry the fish at 360 degrees for 10-15 minutes, depending on how you like your fish. I usually cook the salmon for 15 minutes because we like our fish done--moist but flaky. A couple of minutes before you think your fish will be done, sprinkle the top of the fish with the walnuts. Spritz the tops of the walnuts/the fish with a little olive oil or non-stick cooking spray. Put the fish back in the air fryer for a couple of minutes more to finish cooking and toast the walnuts. Remove the fish from the air fryer, lifting the fish out with the foil. Let the salmon stand a few minutes before serving it, sprinkled with a little parsley, if you like.
