These little cakes are easy and make a really good main dish for a simple supper. Making the cakes also is a great way to stretch your food budget by using up a small amount of leftover ham. The cakes are a little crispy on the outsides and soft and tasty on the insides. You can make the cakes in minutes using your food processor, so no time-consuming grating of potatoes or ham is necessary. I make the cakes in pie tins or mini pizza pans, but I suspect ramekins also would work (although you will have to adjust the cooking time, lengthening it a bit). You don't need much alongside the cakes, just a salad and perhaps a green vegetable. (Also, watch our for significant someones who pull pieces off a cake before the photos--i.e., the hubs snitched a piece!) Enjoy!

Air Fryer Ham and Potato Cakes -- Makes 6-8
1 medium onion, partially chopped
1/4 - 1/3 cup of celery
2-3 medium/large potatoes, peeled and partially chopped (2 1/2 - 3 cups)
2 cups of ham
1/4 teaspoon of garlic powder
1/4 teaspoon of pepper
1 -2 teaspoons of dried parsley flakes
1 teaspoon of Dijon mustard
3/4 cup of plain Greek yogurt (fat free is fine)
1 tablespoon of grated Parmesan cheese
1 large egg
1/2 cup of shredded Italian-style cheese
Paprika to sprinkle
Add the onion and celery to the bowl of your food processor and pulse them until they are mostly grated/chopped into tiny bits. Dump them into a large bowl. Add the potatoes into the bowl of the now-empty food processor bowl and pulse them until they are grated/chopped into tiny bits. Dump the potatoes into the bowl with the onion and celery. Add the ham to the now-empty food processor and pulse it until it is finely grated. Put the ham in the bowl with the vegetables. Add to the ham and vegetables the garlic powder, pepper, dried parsley, Dijon mustard, Greek yogurt, Parmesan cheese, and egg. Mix everything together well. Stir in the shredded Italian cheese. Spritz 6-8 mini pie tins (or use mini pizza pans) with non-stick cooking spray. Press about 1/3-1/2 cup of the potato-ham mixture into each of the pie tins (or pizza pans). Sprinkle a little paprika on top of the mixture in each pan and spritz the tops with non-stick cooking spray. Air fry the cakes at 360 degrees for about 15 minutes. Let the cakes cool in their pans for 5-10 minutes before running a plastic knife along the sides of the pan and then carefully removing the cakes from the pans to serve.
