How to Make Quick, Easy, and Inexpensive Pumpkin Cookies With a Cake Mix

These cookies are easy to mix up in minutes, and they are a great way to have cookies in under an hour. The cookies are soft with a little chew to them, and they are studded with white baking chips. If you have an extra cup of pumpkin left over from another recipe, the cookies also are a great way to use up that pumpkin. I also make the recipe with leftover cooked kabocha squash, which works quite well. This recipe has a few more ingredients in it than some of the other recipes for cake mix pumpkin cookies out on the internet. I think the additional ingredients help the texture and taste of the cookies considerably, so I think they are worth adding. If you don't care for the white chips, you can substitute chocolate chips, raisins, dried cranberries, or even shelled pumpkin seeds (pepitas). These cookies really are fast and easy to make, and they taste homemade. Enjoy!

Quick Cake Mix Pumpkin Cookies -- Makes about 24 Cookies
1 cup of canned pumpkin or cooked kabocha squash
1/2 cup of canola oil
1 large egg
1 teaspoon of vanilla
1 1/2 teaspoons of pumpkin spice
15.25-ounce box of yellow cake mix
1/2 cup of flour (I use white whole-wheat flour, but all-purpose is fine)
1/4 cup of quick oats
3/4 cup of white baking chips
Line baking sheets with baking parchment and preheat the oven to 350 degrees. In a large bowl whisk together well the pumpkin (or squash), oil, egg, and vanilla. With a sturdy spoon mix in the cake mix gradually until blended. Add the flour and oats and mix them in until blended. Stir in the white chips. Drop 1 1/2 tablespoons scoops of dough onto the prepared pans, spacing the scoops a couple of inches apart. With damp fingers, flatten the dough out a little until it's about 1/2-inch thick. Bake the cookies for about 15 minutes or until just set and starting to brown a tiny bit on the edges. Let the cookies cool on the cookie sheets for a few minutes before removing them to cool completely.
