How to Make Quick Cherry-Almond Sourdough Scones (Fruit Sweetened, Diabetic Friendly, No Artificial Sweeteners)

These scones are simple and good. You can mix them up in minutes, and they air fry in about 10 minutes. The scones have baking powder in them, so you won't need to let them rise (although if you leave them on the counter for a bit, they'll get some extra "yeasty" lift to them). The scones are reasonably "good for you, " with a modest amount of butter, whole-grain flour, and no refined sugar. The scones get their sweetness primarily from dark cherries (I use frozen cherries), which also add moisture to the dough. The sweetness of the cherries contrasts nicely with the sourdough tang. Chopped, toasted almonds add crunch and flavor to the scones and also increase the protein content of the treats. In moderation (of course!) the scones are great if you're on a diabetic diet or want to "eat healthy." We like the scones for a treat with dinner (in lieu of other carbs), for breakfast, or as a nice snack with a cup of tea or coffee. Enjoy!

Sourdough Cherry-Almond Scones (Diabetic Friendly) -- Makes 8-12


1 cup of white whole-wheat flour

2 teaspoons of baking powder

1/2 teaspoon of salt

2 tablespoons of butter, cut into small bits

3 tablespoons of canola oil

1 cup of sourdough starter/discard

1/2 cup of chopped, toasted almonds

1 cup of dark, pitted cherries (I use frozen)


In a large bowl combine the flour, baking powder, and salt. With a fork, cut in the butter. Add the canola oil, drizzling it in a tablespoon at a time and working it into the dry ingredients with a fork. Stir in the sourdough starter/discard with a sturdy spoon until combined and the mixture comes together. Dump the mixture out onto a lightly floured surface and pat the mixture into a rectangle about an inch thick. Sprinkle on the chopped nuts and cherries, evenly. Press the nuts and cherries into the dough and fold the dough over several times, then knead the dough a half dozen times or so to incorporate the nuts and cherries. Roll or pat the dough into a circle about 1 1/2-inches thick. Cut 8-12 dough triangles.

Air Fryer: Put the dough triangles on small pieces of baking parchment (to fit your air fryer basket), leaving an inch or two of space between the triangles. Air fry the dough at 350 degrees for about 10 minutes or until a deep, golden brown.

Oven: Preheat the oven to 400 degrees. Put the dough triangles on a baking sheet lined with baking parchment, leaving a couple of inches of space between the dough triangles. Bake the dough triangles for 10-15 minutes or until a deep, golden brown.
