This easy lemon butter tilapia takes minutes to prepare and cooks in your air fryer in 10-15 minutes or bakes in the oven in about 20 minutes. The tilapia is light, simple, and easy on the stomach and wallet. The fish is great if you're diabetic or want to "eat healthy," as it's low in carbohydrates and high in protein. I love to make the recipe on busy days, because it's so simple. We like the fish with a green vegetable, salad, and quinoa or a slice of whole-grain bread. Enjoy!

Lemon Butter Tilapia -- Serves 2


3/4 pound of tilapia fillets

2 tablespoons of melted butter

1 tablespoon of lemon juice

2-3 tablespoons of torn parsley, plus 1 extra tablespoon for serving

1/4 teaspoon of salt

1/4 teaspoon of pepper


Spritz an 8-inch pan with non-stick cooking spray or line the pan with aluminum foil and spritz the foil for easy cleanup. Pat the fish dry with a paper towel and lay the fillets, not touching, on the prepared pan. In a cup or small bowl combine the butter, lemon juice, 2-3 tablespoons of parsley, salt, and pepper. Pour the mixture evenly on top of the fish fillets.

Air Fryer: Air fry the fish at 360 degrees for about 15 minutes or until the fish flakes a bit with a fork and is cooked to your preference. Sprinkle on a bit more fresh parsley before serving the fish.

Oven: Preheat the oven to 400 degrees. Bake the fish for 15-20 minutes or until the fish flakes a bit with a fork and is cooked to your preference. Sprinkle on a bit more fresh parsley before serving the fish.
