These little cookies are the perfect complement to tea, coffee, ice cream, puddings, or fruit. The cookies are a tad crispy on the edges and almost cake-like in the centers. Orange zest flavors the cookies gently, and almonds lend flavor and crunch. The cookies mix up in minutes without a lot of equipment, and they air fry in about 10 minutes. If you don't have oranges on hand, you can use grated clementine or tangerine zest, or try the cookies with grated lemon zest. All are good! Enjoy!
Air Fryer Orange-Almond Cookies -- Makes 10-12
2 tablespoons of melted butter
2 tablespoons of canola oil
2 tablespoons of milk
1/2 cup of sugar
1/2 teaspoon of grated orange zest
1 large egg
1/4 teaspoon of almond extract
1 1/4 cups of flour
1/2 teaspoon of baking powder
1/4 teaspoon of salt
1/8 teaspoon of baking soda
1/4 cup of finely chopped almonds
Sugar to sprinkle
Cut small pieces of baking parchment to fit your air fryer basket. In a medium bowl or measure, whisk together well the butter, oil, milk, sugar, zest, egg, and almond extract. Stir in the flour, baking powder, salt, and baking soda until just combined. Stir in the almonds. Drop 1 1/2 tablespoon mounds of dough onto the parchment paper, two or three mounds to each parchment sheet, and spacing the mounds as far apart as possible. Sprinkle the tops of the mounds with a little sugar. Put one dough-topped piece of parchment in your air fryer basket, put the basket in the air fryer, and air fry the dough at 320 degrees for 8-10 minutes or until the cookies are lightly browned. Remove the cookies from the air fryer basket to cool and repeat the cooking process with the remaining dough.
