How to Make Low Sugar Apple-Oat Cookie Cakes (Diabetic Friendly)

These are tasty little treats that are low in sugar, high in taste, and much more nutritious than typical cakes and cookies. The small cakes--which are something in between a muffin top, scone, and a cookie--are soft, studded with bits of sweet-tart apple, and gently spiced with sweet spices. The cakes contain no butter, no eggs, and no wheat flour. If you're on a diabetic diet, the cakes are acceptable (in moderation), as they include good amounts of "healthy" fats, fiber, and protein. The sweetness in the cakes comes from apples and from dates or raisins (either will work). Walnuts provide a bit of crunch to the not too sweet cakes. I really like the cakes for breakfast, and they also make a great snack with a piece of cheese. Enjoy!

Low Sugar Apple-Oat Cookie Cakes -- Makes 6+


1 tablespoon of milled flax seed mixed with 1/4 cup of water

2 teaspoons of canola oil

1/4 cup of applesauce

1/2 teaspoon of apple pie spice (or use a mixture of cinnamon, allspice, and nutmeg)

1/2 teaspoon of vanilla

1/4 cup of plain Greek yogurt (fat free is fine)

2 tablespoons of chopped pitted dates or raisins

1/3 cup of oat flour (grind quick or old fashioned oats in a food processor)

1/2 teaspoon of baking powder

1/8 teaspoon of salt

1 small apple, cored and chopped into smallish (1/4-1/2-inch) bits (I use Granny Smith)

1/4 cup of chopped walnuts


In a large bowl whisk together the flax seed/water mixture with the canola oil, applesauce, apple pie spice, vanilla and yogurt. Stir in the dates or raisins, the oat flour, baking powder, and salt until combined. Fold in the apple pieces and walnuts. Drop small mounds (1 1/2 - 2 tablespoons) onto baking parchment, leaving a couple of inches between the mounds. Spread the mounds out a bit with the back of a spoon to about 1/2-inch thickness.

Air Fryer: Air fry the cakes at 335 degrees for 10-13 minutes or until golden brown and set. Remove the cakes on their parchment and let them stand on the parchment for about 10 minutes before removing the cakes to cool completely.

Oven: Preheat the oven to 350 degrees and bake the cakes for 15-20 minutes or until golden brown and set. Let the cakes stand on their parchment for about 10 minutes before removing the cakes to cool completely.
