How to Make Low-Carb Spinach, Cottage Cheese, and Feta Quiches in Your Air Fryer (Diabetic Friendly)

These simple no-crust quiches are quick, easy, and good. The quiches are loaded with protein, and they are creamy and cheesy without being heavy and greasy. A combination of Parmesan, mozzarella, feta, and cottage cheese provides plenty of flavor and creaminess. A small amount of cooked spinach (leftover is fine) increases the nutritional value of the quiches as well as the flavor. You can make the quiches in 15-20 minutes in the air fryer, and leftovers reheat well for quick breakfasts or lunches later in the week. The quiches are great if you're on a diabetic diet or want to "eat healthy." We like the quiches with fruit and whole-grain bread on the side. Enjoy!

Low-Carb Spinach, Cottage Cheese, and Feta Quiches (Diabetic Friendly) -- Makes 4
2 large eggs
1/4 cup of cooked spinach (leftover is fine!)
1/2 cup of cottage cheese
1 tablespoon of grated Parmesan cheese
2 tablespoons of crumbled feta cheese
1/4 cup of shredded mozzarella cheese
1/8 teaspoon of garlic powder
1/4 teaspoon of onion powder
1/4 teaspoon of dried oregano
Spritz 4 medium ramekins well with non-stick cooking spray. In a medium bowl or measure whisk the eggs well. Add the remaining ingredients and stir everything together well until completely combined. Divide the mixture evenly among the prepared ramekins. Air fry the quiches at 320 degrees for 15-20 minutes or until a deep, golden brown. Let the quiches cool in their ramekins for 10-15 minutes. Run a knife around the edges of the ramekins to loosen the quiches and flip the quiches out to serve or to cool completely and refrigerate for later in the week. The ramekins reheat well in the microwave at 50 percent power (just give them about a minute).
