How to Make Loaded Peanut Butter Cookies in Your Air Fryer

These are my (new) favorite cookies--at least for this week! The cookies are fast to make, full of chewy peanut butter flavor, soft in the middle, and a tad crispy on the edges. They are close to "bakery style" cookies, but better. It's optional but highly recommended to use two types of chips in the cookies. Chocolate chips offset the sweetness of the cookie, and peanut butter chips add more peanut butter flavor and a little creaminess to the cookies. Making the cookies in the air fryer yields a better cookie in this case than using the regular oven. The cookies puff up, then deflate a little and come out golden brown. A small amount of quick oats in the batter helps the texture of the cookie. You can try convincing yourself that with oatmeal and peanut butter in them, the cookies are good for you, but, really, you're going for taste here--which is exceptional. Try the cookies with a big glass of milk, tea, coffee, or a bowl of ice cream. If you'd like, you can make a small number of cookies, then wrap the remainder of the dough and refrigerate it to air fry another day for fresh, hot cookies. Enjoy!

Air Fryer Loaded Peanut Butter Cookies -- Makes 15 +

3 tablespoons of melted butter

1/3 cup of canola oil

2 tablespoons of milk

1/2 cup of sugar

1/4 cup of dark brown sugar

1/3 cup of peanut butter

1 teaspoon of vanilla

1 large egg

1 1/4 cup of flour

1/2 teaspoon of baking soda

1/4 teaspoon of salt

1/4 cup of quick oats

1 1/4 cup of chocolate and/or peanut butter chips (I use 3/4 cup of chocolate and 1/2

cup of peanut butter chips)

In a medium bowl or measure stir together well the butter, oil, milk, sugar, brown sugar, peanut butter, and vanilla. Beat in the egg. Add the flour, baking soda, salt, and oats until combined. Stir in the chocolate and peanut butter chips. Cut small pieces of baking parchment to fit your air fryer basket. Drop 2-3 mounds (each about 1 1/2 tablespoons) of dough onto each parchment sheet and flatten the mounds just a bit with your fingers (so they don't roll). Put a dough-topped parchment sheet in your air fryer basket, put the basket in the air fryer, and air fry the cookies at 320 degrees for about 10 minutes. Remove the cookies from the air fryer basket to cool and repeat the air frying process with the remaining dough. Alternatively, make a small number of cookies, wrap the dough well in plastic wrap, and refrigerate the remaining dough to air fry another day.
