How to Make Fruit-Sweetened Date and Pear Muffins (Diabetic Friendly, No Artificial Sweeteners, No Butter)

These date and pear muffins are just barely sweet and are moist and juicy with fresh pears (though, I imagine that canned pears would work well, too!). The pears and chopped dates provide the sweetness to the easy-to-make muffins. Warm spices--cinnamon, ginger, and allspice provide extra flavor. With almond and white whole-wheat flour, the muffins are high in fiber and protein and great if you're on a diabetic diet or want to "eat healthy." You can make the muffins in the oven or the air fryer. We like the muffins for breakfast, and they also make a nice snack, especially with a little almond butter on them.

Fruit-Sweetened Date and Pear Muffins (Diabetic Friendly) -- Makes 12


1/3 cup of canola oil

2/3 cup of milk

1 teaspoon of vanilla

1 large egg

1 cup of almond flour

1/2 cup of white whole-wheat flour

1 1/2 teaspoons of baking powder

1/4 teaspoon of salt

1/4 teaspoon of allspice

1/2 teaspoon of cinnamon

1/2 teaspoon of ground ginger

2 medium pears, cored and chopped (you can peel them or not--I don't)

1/2 cup of chopped, pitted dates


In a large bowl whisk together well the oil, milk, vanilla, and egg. Add to the bowl the almond flour, white whole-wheat flour, baking powder, salt, allspice, cinnamon, and ginger and stir the dry ingredients into the wet ingredients until just combined. Add to the bowl the chopped pears and dates and stir them in until combined. Spritz 12 muffin cups with non-stick cooking spray. Divide the batter evenly among the muffin cups.

Air Fryer: Air fry the muffins at 325 degrees for about 15 minutes or until a pick inserted in the center of a muffin comes out with no wet batter attached. Let the muffins cool in their cups for 5-10 minutes before turning them out to cool completely.

Oven: Preheat the oven to 350 degrees. Bake the muffins for 20-25 minutes or until a pick inserted in the center of a muffin comes out with no wet batter attached. Let the muffins cool in their cups for 5-10 minutes before turning them out to cool completely.
