How to Make Fruit-Sweetened Chocolate Oat Chip Cookies (Diabetic Friendly, No Butter)

These cookies are soft, squishy, and good! They also are sweetened primarily with dates, not refined sugar. You can make the cookies in the air fryer (my preference) or regular oven, and they mix up in minutes in the food processor. The cookies are high in protein, which comes from black beans (no the cookies don't taste "beany") and almonds, and they also contain a significant amount of beneficial fiber. If you're on a diabetic diet or want to "eat healthy" the cookies are a great option (as always, in moderation!). We like the cookies or a simple snack or dessert with a cup of coffee or tea, and they make great after-school treats with a glass of milk. Enjoy!

Fruit-Sweetened Chocolate Oat Chip Cookies (Diabetic Friendly, No Butter) -- Makes 12+


1 cup of rolled oats (I usually use "Old Fashioned")

1 cup of pitted dates

1/4 cup of cocoa powder

1 cup of black beans, with their liquid

1 large egg

1 teaspoon of vanilla

1/2 teaspoon of chocolate extract (optional but good)

1/2 cup of canola oil

1/2 teaspoon of baking powder

1/2 teaspoon of baking soda

1/4 teaspoon of cinnamon (optional but good)

1/4 teaspoon of salt

1/8 teaspoon of espresso powder (optional)

1/4 teaspoon of chopped almonds

1/2 cup of dark chocolate chips


Put the oats and dates in the bowl of a large food processor fitted with the S-blade and process them together for a couple of minutes or until the oats are mostly ground and the dates form little black specks in the oat flour. Add the cocoa powder and process it in. Add the black beans, egg, vanilla, chocolate extract, and oil and process them into the oat/date mixture. Add the baking powder, baking soda, cinnamon, salt, espresso powder, and chopped almonds and process them into the mixture. Carefully remove the S-blade from the food processor bowl and stir in the chocolate chips by hand.

Air Fryer: Cut small pieces of baking parchment to fit your air fryer basket. Drop 2 tablespoon scoops of dough onto the parchment, leaving a couple of inches of space between the dough mounds. With damp fingers flatten the dough mounds to about 1/2-inch thick. Air fry the dough at 320 degrees for 9-10 minutes or until the cookies are puffed and mostly set. Let the cookies cool on their parchment for at least 5 minutes before removing them to cool completely.

Oven: Preheat the oven to 350 degrees. Line a baking sheet with baking parchment. Drop 2 tablespoon scoops of dough onto the parchment, leaving a couple of inches of space between the dough mounds. With damp fingers flatten the dough mounds to about 1/2-inch thick. Bake the cookies for 10-15 minutes or until puffed and mostly set. Let the cookies cool on their parchment for a few minutes before removing them to cool completely.
