How to Make Easy Sourdough Cheese and Dill Roll Up Breads (Diabetic Friendly, No Eggs, No Butter)

These breads are simple to make and loaded with "good for you" whole grain flour, fiber, and protein. The breads contain no butter or eggs, and you can make them in the air fryer or oven. If you're diabetic or want to "eat healthy," the breads are a good option--in moderation, as always. I use cheddar and Parmesan cheeses in the breads, but you can vary the cheese to suit your taste. Swiss cheese or Colby-Jack would be good options. We like the breads for breakfast, lunch, and dinner. A slice goes especially well with a big bowl of soup or a salad. Enjoy!

Easy Sourdough Cheese and Dill Roll Up Breads (Diabetic Friendly) -- Makes 2 Small Loaves


1 cup of starter/discard

1/4 cup of canola oil

1/4 cup of milk

1 tablespoon of ground flax seeds

3/4 cup of white whole-wheat flour


In a large bowl whisk together well the starter/discard, oil, milk, and flax seeds. Stir in the white whole-wheat flour until well blended. Loosely cover the bowl and let the mixture sit for at least an hour. I routinely let my mixture sit for 3-4 hours, and it's fine. When you're ready, add to the mixture:


3/4 cup of white whole-wheat flour

1 teaspoon of salt

1 tablespoon of grated Parmesan cheese


Stir, then knead in the flour, salt, and Parmesan, then knead the dough for 3-5 minutes, adding an additional 1/4 cup or so of flour to prevent the dough from being too sticky to knead. Roll or pat the dough out into a 12-inch or so square. Sprinkle the top of the dough evenly with:


1 cup of shredded cheddar cheese

1/2 teaspoon of dried dill


Roll up the dough, jelly-roll style, encasing the cheese/dill in the roll. With a sharp knife, cut the rolled dough, cross-wise, into 12 pieces. Spritz 2 smallish loaf pans (I used 8- x 4-inch pans) with non-stick cooking spray. Lay three round pieces of dough along one side of each pan, then lay three more pieces of dough along the other side, slightly shingling the dough pieces. Spritz the dough with a little oil or non-stick cooking spray and loosely cover it with plastic wrap. Let the dough rise until it increases in volume by about one-third.

Air Fryer: Air fry the breads at 320 degrees for 12-15 minutes or until golden brown.

Oven: Preheat the oven at 350 degrees. Bake the breads for about 20 minutes or until golden brown.

Let the breads cool a little, then pull or slice off pieces. Alternatively, let the breads cool completely before slicing them for neater slices.
