How to Make Easy Orange-Ginger Boneless Pork Ribs (or Chops) With Sweet Potatoes in Your Air Fryer in 15 Minutes (Diabetic Friendly)

This is a simple and quick dinner that really tastes good! The boneless pork ribs--or use boneless pork chops, if you prefer--cook atop precooked sweet potato slices for an easy main dish and side dish in one. I usually cook a medium-large sweet potato in the microwave while I prepare the pork, so the process is fast. The pork comes out of the air fryer moist and tender with a simple sauce that includes orange, ginger, and a little date puree (just mash a couple of pitted dates with enough very hot/boiling water to cover them or use dark brown sugar, if you're not diabetic). The sweet potatoes benefit from the flavors of the sauce and the pork. The nutritious dish is appropriate if you're on a diabetic diet or want to "eat healthy." We like the pork and sweet potatoes with a salad and green vegetable for a nice and fast-cooking dinner. Enjoy!

Air Fryer Orange-Ginger Boneless Pork Ribs With Sweet Potatoes (Diabetic Friendly) -- Serves 2


1 cup of cooked sweet potato slices

3-4 boneless pork ribs (8-12 ounces)

1/4 cup of orange juice

1/4 teaspoon of onion powder

1/8 teaspoon of pepper

1/4 teaspoon of salt, plus 1/8 teaspoon, divided

1 tablespoon of date puree (or use dark brown sugar, if you're not diabetic)

1 tablespoon of ground fresh ginger (the kind from the squeeze bottle is fine)

1/4 teaspoon of cinnamon

1 tablespoon of olive oil


Spritz a small casserole dish with non-stick cooking spray and lay the potato slices on the bottom of the dish. Place the pork ribs on top of the potato slices and sprinkle them with 1/8 teaspoon of salt. You can also use boneless pork chops that are about 1-inch thick. In a small bowl or cup mix the orange juice, onion powder, pepper, 1/4 teaspoon of salt, date puree, ginger, cinnamon, and olive oil. Pour half over one side of the pork, then turn the pork over, and drizzle the remainder of the sauce over the other side of the pork and the sweet potatoes. Air fry the pork at 360 degrees for 10-15 minutes, turning the pork over mid-way through the cooking time. The pork should reach an internal temperature of about 145 degrees (it will rise just a bit after you remove it from the air fryer). Let the pork stand for about five minutes before serving it.
