How to Make Easy Lemon, Garlic, Parsley Tilapia With Baby Potatoes in Your Air Fryer (Diabetic Friendly)

This simple tilapia recipe is full of flavor and easy to make in your air fryer. The fish comes out moist but not "wet," and it's topped with a combination of garlic, parsley, and lemon juice. Beneath the fish are baby potatoes, which get a head start in the air fryer while you prepare the fish. The potatoes finish cooking with the fish, and you get extra flavor in the potatoes and one less dish to clean. I like to top the tilapia with a few cherry or grape tomatoes for extra color and a bit more taste, but you can leave them off, if you prefer. The fish is light-tasting and full of protein. We like it with a green vegetable and salad. Enjoy!

Air Fryer Lemon, Garlic, and Parsley Tilapia -- Serves 2 +


6-8 baby potatoes, washed and quartered

1/2 teaspoon of salt, divided

3/4 pound of tilapia fillets (2 fillets)

1 tablespoon of butter

2 tablespoons of olive oil, divided

2-3 cloves of garlic, chopped (about 2 teaspoons)

1/2 cup of chopped parsley, divided

1/2 teaspoon of salt, divided

1/4 teaspoon of pepper

2 teaspoons of lemon juice

Cherry or grape tomatoes sliced in half (optional)


Spritz an 8-inch pan with non-stick cooking spray or line the pan with aluminum foil and spritz the foil, for easier cleanup. Put the potatoes in the bottom of the prepared pan and mix them with 1/4 teaspoon of the salt, 1 tablespoon of the olive oil, and 2 tablespoons of the chopped parsley. Air fry the potatoes at 360 degrees for about 10 minutes or until mostly done (you may feel just a bit of resistance when you pierce a potato with a knife). While the potatoes are cooking, in a small bowl or cup combine the butter, the remaining 1 tablespoon of olive oil, the garlic, the remaining 1/4 teaspoon of salt, the pepper, and the lemon juice. Microwave the mixture, covered, for about 30 seconds or until hot. Mix in 1/4 cup of the chopped parsley. Set the mixture aside for a few minutes. Pat the tilapia fillets dry with a paper towel and then cut them in half, vertically, along the center line that runs up and down the middle of the fillet. When the potatoes are finished, lay the fish fillets on top of them with the thickest pieces to the sides and the thin pieces of fish in the middle, slightly overlapping each other (so you get roughly equal thicknesses of fish). Top the fish evenly with the butter/oil/parsley mixture. If you'd like, cut a few cherry or grape tomatoes in half and lay them on top of the fish. Air fry the fish (on top of the precooked potatoes) at 360 degrees for 10-15 minutes or until the fish is done to your preference (I usually cook the fish 13-15 minutes until it flakes a bit with a fork). Sprinkle the remaining 2 tablespoons of the parsley on top of the fish just before you serve it.
