How to Make Easy, Inexpensive Socca or Farinata-- Chickpea Bread--in Your Air Fryer (Diabetic Friendly)

Socca (the French version), or Farinata (the Italian version) is an unleavened chickpea bread that is crispy on the outside and a little custard-like in the interior. It's good! It's also inexpensive to make and nutritious, with a good amount of protein and fiber. The bread is great if you're on a diabetic diet or want to "eat healthy." I was curious about whether I could make the bread in the air fryer, and the answer is yes. The bread comes out of the air fryer nicely browned on top and soft on the inside. It is fairly flat, as it's unleavened, and the bread is the perfect vehicle for whatever topping you like--caramelized onions, cheese, olives, pizza toppings, etc.. You can make the bread plain, adding no herbs or spices, and it will be good (follow the recipe below but just use the besan, water, salt, and olive oil). I like to add a few extras to give the bread more flavor. Rosemary leaves are especially good, I think. The bread takes minutes to whisk up and air fries in 10-15 minutes. You will need to let the batter sit for at least 30 minutes before air frying, as the chickpea flour needs to absorb moisture. Try the bread in lieu of cornbread with soups and salads, with appetizers, and for a simple snack with cheese. Enjoy!

Air Fryer Socca or Farinata-- Chickpea Bread (Diabetic Friendly) -- Makes an 8-Inch Pan
1 cup of besan (chickpea flour)
1 cup of water
1/4 teaspoon of salt
2 tablespoons of grated Parmesan cheese
1 teaspoon of onion powder
1/2 teaspoon of pepper
3 tablespoons of olive oil, divided
1 - 1 1/2 teaspoons of chopped fresh rosemary leaves
In a large bowl whisk together well the besan, water, salt, Parmesan cheese, onion powder, pepper, 1 tablespoon of the olive oil, and the fresh chopped rosemary. Cover the mixture and let it sit for at least 30 minutes. When you're ready to air fry the bread, pour the remaining 2 tablespoons of olive oil in the bottom of an 8--inch pan (I use a disposable aluminum pan, which just fits in my air fryer basket). Whisk the bread batter again and pour it into the pan with the oil. Use your whisk to gently mix in the oil a bit. Air fry the bread at 400 degrees for 10-15 minutes or until a deep golden brown. The bread is best warm, but you can refrigerate any leftovers and warm them up in the air fryer later.
