This "baked" oatmeal is easy, inexpensive, nutritious, and really tasty. The baked oatmeal comes out of the air fryer toasty brown on top and soft and slightly custard-like inside--think of a cross between a quiche and banana bread. The dish is heartier than the usual "bowl of oatmeal for breakfast," as this version includes lots of protein with eggs, milk, and almonds. The baked oatmeal is lightly sweetened with bananas, and a small amount of raisins add hits of extra sweetness and flavor. If you're diabetic or want to "eat healthy," the baked oatmeal is a great option. We like the baked oatmeal with Greek yogurt and more fruit alongside. Leftovers reheat well in the microwave on 50 percent power later in the week. Enjoy!

Air Fryer Fruit-Sweetened Banana-Almond "Baked" Oatmeal (Diabetic Friendly) - Serves 4+


2 medium, very, very ripe bananas, mashed

2 large eggs

1/3 cup of canola oil

1 cup of milk

1 teaspoon of vanilla

1/2 cup of finely chopped, toasted almonds, plus 1/4 cup of coarsely chopped or sliced

almonds

1 cup of rolled oats (I use old fashioned)

2 teaspoons of cinnamon, plus extra to dust

1/4 teaspoon of salt

1 teaspoon of baking powder

1/4 cup of raisins


Spritz an 8-inch round baking dish or square pan with non-stick cooking spray. In a large bowl whisk together well the bananas, eggs, oil, milk, and vanilla. Add to the bowl the 1/2 cup of finely chopped almonds, the oats, 2 teaspoons of cinnamon, the salt, baking powder, and raisins. Stir the dry ingredients into the wet ingredients until everything is well combined. Pour the mixture into the prepared dish/pan. Sprinkle the top of the mixture with the 1/4 cup of coarsely chopped/sliced almonds and then dust the top of the mixture with a little extra cinnamon. Air fry the mixture at 320 degrees for 15 minutes. Turn down the heat to 300 degrees and air fry the mixture for another 10 minutes or until a deep, golden brown and mostly set. Let the mixture cool a little before serving it in wedges or squares.
