How to Make Easy, Inexpensive Crispy Tuna Cakes With Spinach and Feta Cheese (Diabetic Friendly)

These are one of my new favorite versions of tuna cakes (see the others on the website for more ideas!). The tuna cakes are crispy on the outside and soft and moist on the inside. They are loaded with garlic, onion, spinach, and feta cheese. The tuna cakes also are inexpensive and simple to make, and you can cook them in the air fryer in 10-15 minutes or bake them in a regular oven (although the oven version won't be quite as crispy). If you're on a diabetic diet or want to "eat healthy," the protein-packed, low-fat tuna cakes are great. We like the tuna cakes as a change of pace from the usual chicken (again) for dinner, plus the cakes are easy to pull together with items I generally have on hand. Leftover tuna cakes reheat well in the air fryer or microwave, and you can freeze some of them to reheat later in the oven/air fryer for a quick, inexpensive dinner. Enjoy!

Crispy Tuna Cakes With Spinach and Feta Cheese (Diabetic Friendly) -- Makes 8
1/4 cup of chopped celery
1/4 cup of chopped onion
2 teaspoons of chopped garlic
1/4 cup of chopped green onion
1/2 cup of cooked, drained spinach
2 tablespoons of grated Parmesan cheese
1/4 cup of crumbled feta cheese
1 large egg
1/4-1/2 teaspoon of salt (I use 1/4 teaspoon, because the feta is salty)
1/4 teaspoon of pepper
12-ounce can of chunk light tuna, drained
1-2 teaspoons of lemon juice
1/4 cup of plain Greek yogurt
1/2 cup of fresh whole-wheat bread crumbs (1-2 small rolls or an English muffin)
Put the celery and onion in a large bowl with a couple of teaspoons of water and microwave them for 2-3 minutes or until they soften a bit. Stir in the chopped garlic, the green onion, spinach, Parmesan cheese, and feta cheese. Add the egg, salt, pepper, tuna, lemon juice, and yogurt and stir them in until combined. Add the bread crumbs and stir them in until the mixture comes together.
Air Fryer: Spritz two 8-inch square pans well with non-stick cooking spray. Drop four equal portions (about 1/4-cup each) on each pan and, with damp fingers, shape each portion into a patty. Spritz the tops of each patty with canola oil, olive oil, or non-stick cooking spray. Air fry the tuna cakes at 350 for 10-15 minutes or until a deep golden brown.
Oven: Preheat the oven to 400 degrees. Line a baking sheet with aluminum foil (for easy cleanup) and spritz the foil with non-stick cooking spray. Drop eight equal portions (about 1/4-cup each) onto the baking sheet, leaving an inch or two between the portions. With damp fingers, shape each portion into a patty. Spritz the tops of each patty with canola oil, olive oil, or non-stick cooking spray. Bake the tuna cakes for 10-15 minutes or until a deep golden brown.
