These simple cheese scones are good, and you can mix them up in one bowl in minutes. The scones are moist inside and a bit crunchy on the outside. Dill and Parmesan cheese give them great flavor. The scones are low in saturated fat, contain a good amount of protein, and are made with whole-grain white whole-wheat flour. In moderation (as always!), the scones are great if you're on a diabetic diet or want to "eat healthy." I make the scones in the air fryer, and you can also bake them in an oven in under 15 minutes. The scones are great with dinner, soups, salads, and for breakfast. They reheat well in the air fryer or toaster. Enjoy!
Dill and Parmesan Cottage Cheese Scones (Diabetic Friendly) -- Makes 8
2 cups of white whole-wheat flour, plus extra to sprinkle
2 1/2 teaspoons of baking powder
1/4 teaspoon of salt
1/2 cup of cottage cheese (I use low-fat)
1/2 cup of buttermilk, kefir, or use 1/4 cup of milk plus 1/4 cup of yogurt, plus extra milk
to brush on top
2 tablespoons of canola oil
1/2 -1 teaspoon of dried dill (depending on how strong you want the dill flavor)
2 tablespoons of grated Parmesan cheese, plus extra to sprinkle
In a large bowl stir together the two cups of flour, baking powder, and salt. Add to the bowl the cottage cheese, the buttermilk, kefir, or milk/yogurt mixture, the oil, the dried dill, and the two tablespoons of Parmesan. Mix everything together with a sturdy spoon just until combined. You'll have bits of the mixture that don't stick together yet. Sprinkle the counter with a little flour and dump the mixture from the bowl onto the counter. With your hands bring the mixture together into a ball, kneading it just a bit to get the mixture to stick together. Pat the ball into a circle about 3/4-inch thick. Cut the circle into 8 triangles. Brush the top of each triangle with a little milk (about 1/2 teaspoon) and sprinkle on a little Parmesan cheese.
Air Fryer: Cut pieces of baking parchment to fit your air fryer basket and arrange the triangles on the parchment with at least an inch in between. Air fry the dough at 350 degrees for 10-12 minutes until a deep golden brown.
Oven: Preheat the oven to 400 degrees. Line a baking sheet with baking parchment and place the dough triangles on the parchment, leaving an inch or two in between the triangles. Bake the triangles of 10-12 minutes until a deep golden brown.
