These cookies are simple to make, and they actually taste pretty good for low sugar cookies! Rather than incorporating granulated sugar or artificial sweeteners (yuck!) for sweetness, the cookies rely on a little shredded coconut and date puree (it's easy to make in a cup--see below). Grated orange zest gives the cookies extra flavor. The cookies come out of the air fryer in 10-15 minutes, and they are soft and a little chewy. No, the cookies aren't "decadent," because they aren't loaded with a lot of butter, sugar, and other bad things. Nonetheless, the little treats are quite good and, eaten in moderation (of course!), can be included in a diabetic diet. The cookies also make a great, not-too-sweet dessert for kids and anyone else concerned about their sugar intake. We like the cookies with fresh fruit or a cup of coffee or tea. Enjoy!
Diabetic Friendly, Low Sugar Coconut Orange Cookies -- Makes about 10
1/4 cup of salted butter, partly melted
1/8 teaspoon of salt
2 large eggs
1/4 cup of date puree/paste (see below)
1/4 teaspoon of coconut extract
1/2 teaspoon of vanilla
1/4 teaspoon of cinnamon
1/3 cup of coconut flour
1 teaspoon of grated orange zest
1 teaspoon of baking powder
2 tablespoons of shredded coconut (sweetened or unsweetened)
Dried cranberries or raisins to decorate (optional)
In a large bowl combine the butter, salt, eggs, date puree (put 1/4 cup of dates in a cup, pour on enough boiling water to just cover the dates, let them sit for 5-10 minutes, and then mash the mixture with a fork to make a puree/paste), coconut extract, and vanilla until completely mixed. Add the cinnamon, coconut flour, orange zest, baking powder, and coconut and stir them into the wet mixture. Let the batter/dough sit for at least an hour (this will give the coconut flour time to hydrate/absorb some of the moisture from the wet ingredients). Cut small pieces of baking parchment to fit your air fryer basket. Drop small portions--a little more than a tablespoon--of batter/dough onto the parchment, spacing the portions at least an inch apart. Slightly flatten the dough with your fingers until the dough portions are about 1/2-inch thick. Put a dried cranberry in the center of each dough portion, if you like. Air fry the cookies at 300 degrees for 10-15 minutes or until golden brown and set, but still a little soft. The cookies won't spread much. Let the cookies cool on the parchment for at least five minutes before trying to remove them. The cookies will firm up a little on standing.
