This easy recipe for mahi mahi cooks in less than 10 minutes in the air fryer, and the fish comes out moist on the inside and crispy on the outside. The star of the recipe, besides the fish, is the topping, which is a mixture of Panko bread crumbs and french fried onions. I use crispy fried onions from an Asian market, which are far less expensive than the grocery store version typically used to make Thanksgiving green bean casserole. The crispy onions from the Asian market come in a large bag and are great to have on hand for a variety of casseroles, soups, rice, and toppings, in addition to this recipe. Combined with the Panko, the crispy onions give the fish extra flavor as well as a crispy exterior. The mahi mahi is full of protein, and the recipe is relatively low in "bad carbs," making it acceptable if you're on a diabetic diet. We like the fish with a salad, green vegetable, and quinoa. Air Fryer Easy Crispy Onion Mahi Mahi -- Serves 2
1/2-3/4 pound of mahi mahi (2 fillets)
1 tablespoon of light mayonnaise
1 1/2 tablespoons of plain Greek yogurt (non-fat is fine)
1 tablespoon of grated Parmesan cheese
1 teaspoon of lemon juice
1-2 tablespoons of seasoned Panko breadcrumbs
1-2 tablespoons of crispy, fried onions
Spritz a small pan with non-stick cooking spray. Pat the fish dry with a paper towel and place the fillets in the prepared pan. In a small bowl or cup mix together the light mayonnaise, Greek yogurt, Parmesan cheese, and lemon juice and spread the mixture evenly on top of the fish fillets. Mix together the Panko and crispy fried onions and sprinkle them on top of the topping on the fish, pressing the mixture into the topping just a bit with your hands or the back of a spoon. Spritz the topped fillets with a little canola oil, olive oil, or non-stick cooking spray and put the pan in your air fryer basket. Air fry the mahi mahi at 400 degrees for about 6 minutes, then turn down the heat to 320 degrees and air fry the fish for a few more minutes or until the topping is as done as you like it and the fish has reached an internal temperature of 145 degrees. Let the fish cool a few minutes before serving it.
