How to Make Easy Cottage Cheese, Cheddar, and Onion Biscuits (Diabetic Friendly, Air Fryer or Oven)

These simple drop biscuits take about five minutes to mix up and air fry in about 10 minutes or bake in about 15 minutes. The biscuits are crunchy on the outside, soft and moist inside, and loaded with protein. A combination of Parmesan and cheddar cheese gives the biscuits plenty of flavor, and chopped green onions add extra taste as well as color. The cottage cheese adds a slight tang to the biscuits, but its real role is to provide extra moisture, tenderness, and protein. The combination of protein and whole grains in the biscuits makes them a good choice if you're diabetic or want to "eat healthy" (in moderation, as always). We like the biscuits with dinner, and they also are great for breakfast. Enjoy!

Cottage Cheese, Cheddar, and Onion Biscuits (Diabetic Friendly) -- Makes 8
1/2 cup of low-fat cottage cheese
1 tablespoon of milled flax seeds
1 tablespoon of grated Parmesan cheese
2 tablespoons of canola oil
3/4 cup of white whole-wheat flour
1 teaspoon of baking powder
1/4 teaspoon of salt
1/4 cup of quick oats
1/4 cup of thick shredded cheddar cheese
1/4 cup of milk
2 tablespoons of chopped green onions
In a large bowl combine the cottage cheese, milled flax seeds, Parmesan cheese, and oil. Add to the bowl the flour, baking powder, salt, oats, and cheddar cheese and mix them into the cottage cheese mixture. Add the milk and green onions and mix them into the cottage cheese mixture just until everything is moistened and combined.
Air Fryer: Cut pieces of baking parchment to fit your air fryer basket. Drop 8 scoops of dough (each about 2 tablespoons) onto the parchment, leaving a couple of inches between the dough mounds. With damp fingers, squish down the dough mounds until they are about 1-inch thick (you can shape them up into rounds, too, if you like). Air fry the biscuits at 320 degrees for about 10 minutes or until golden brown.
Oven: Preheat the oven to 350 degrees and line a baking sheet with baking parchment. Drop 8 scoops of dough (each about 2 tablespoons) onto the parchment, leaving at least a couple of inches between the dough mounds. With damp fingers, squish down the dough mounds until they are about 1-inch thick (you can shape them up into rounds, too, if you like). Bake the biscuits for 10-15 minutes or until golden brown.
