How to Make Easy Air Fryer Cottage Cheese and Strawberry Breakfast Bakes or Mini Casseroles

If you're tired of the same old breakfast bake, try these simple cottage cheese bakes or mini casseroles. You can mix them up in minutes, and they air fry in 25-30 minutes. The bakes are loaded with protein and are only moderately sweet. I use crunched up dried strawberries in the bakes, but, if you can't find them, you can leave them out and serve the bakes with fresh strawberries or other fruit on top or alongside. The bakes will puff up and rise above the lips of their ramekins--like souffles--so serve them immediately if you want to show them "all puffed up." Otherwise the souffles will deflate quickly (too quickly for my camera skills). Either way, the souffles will be quite good--light, a little tangy, a little sweet, and easy to eat. Enjoy!

Air Fryer Strawberry Cottage Cheese Souffles -- Makes 2
1 cup of cottage cheese (low-fat is fine)
2 large eggs
1 tablespoon of sugar
1/2 teaspoon of vanilla
2 tablespoons of crunched up dried strawberries
1 teaspoon of dark brown sugar
Spritz 2 large ramekins with non-stick cooking spray. In a medium bowl or measure whisk together well the cottage cheese, eggs , sugar, and vanilla. Stir in the dried strawberries. Divide the mixture evenly between the two ramekins. Sprinkle the top of the batter in each ramekin with half of the brown sugar. Put the filled ramekins in your air fryer basket, put the basket in the air fryer, and air fry the bakes at 300 degrees for 25-30 minutes or until the souffles are puffed and the brown sugar has caramelized/turned quite dark on the tops of the souffles. Remove the ramekins from the air fryer basket carefully and serve the bakes immediately in their ramekins. Alternatively, you can let the bakes deflate, cool a little in their ramekins (until the ramekins are cool enough to handle), and tip the the bakes out onto plates to serve them.
