How to Make Carrot-Apple Pancakes in the Air Fryer (Diabetic Friendly)

These simple carrot and apple pancakes are easy to make in the air fryer and come out soft inside and a little crispy on the outside. The pancakes are mildly sweet from the carrots and apples--not refined sugar--and are great for breakfast or alongside a main dish. With plenty of fiber, a small amount of whole-grain flour, and chopped, toasted walnuts, the pancakes are great if you're on a diabetic diet or want to "eat healthy." We like the pancakes with Greek yogurt on top for breakfast and alongside pork or chicken for dinner. Enjoy!

Air Fryer Carrot and Apple Pancakes (Diabetic Friendly) -- Makes 8
1 1/2 cups of grated carrot and apple (about half of each, core but don't peel the apple)
1/4 teaspoon of salt
1-2 teaspoons of fresh grated or "squeeze bottle" ginger
1/4 teaspoon of cinnamon
1 large egg
2 teaspoons of lemon juice
1/3 cup of chopped, toasted walnuts
1/4 cup of white whole-wheat flour
1/4 teaspoon of baking powder
In a large bowl or measure mix all of the ingredients together until well combined. Drop 8 portions (about 3-4 tablespoons each) of the mixture onto baking parchment cut to fit your air fryer basket (or use parchment liners). Leave a couple of inches between the portions, and, with the back of a spoon, flatten out the portions until you have rounds about 1/3-inch thick. Spritz the tops of the pancakes with a little canola oil or use non-stick baking spray. Air fry the pancakes at 400 degrees for 10-13 minutes or until a deep, crispy brown, flipping them over mid-way through and spritzing the second side with oil/spray.
