These boneless pork ribs are quick and good! They cook in minutes in your air fryer and come out moist and tender. The "not spicey" barbecue sauce is low in sugar and makes the ribs great if you're on a diabetic diet or just want to "eat healthy." Most commercial barbecue sauces are loaded, and I mean really loaded with sugar. This sauce isn't. It's sweetened with date puree, which is nutritious and less likely to cause blood sugar spikes than refined sugar. (See https://www.thenfeedthem.com/post/how-to-make-date-puree-and-why-you-should-especially-if-you-re-diabetic-or-cutting-back-on-sugar). Yes, you could use artificial sweeteners, but those come with significant risks as well as tasting weird or leaving an unpleasant aftertaste. This sauce is easy to make, and I keep some on hand in the refrigerator to use on chicken, meatloaf, and in other recipes that call for barbecue sauce. Making the sauce, in addition to being easy, also is far less expensive than buying the commercial no or low sugar barbecue sauces (which usually do include artificial sweeteners). We like the pork ribs with baked beans (you can use the barbecue sauce in them!) and a salad. Enjoy!
Air Fryer Boneless Pork Ribs With Low Sugar Barbecue Sauce -- Serves 2
6-8 ounces of boneless pork ribs
1/4 - 1/3 cup of low-sugar barbecue sauce (see below)
Cut a piece of aluminum foil that will fit in the bottom of your air fryer basket and an inch or two up the sides of the basket and fit the foil into the basket. Spritz the foil with non-stick cooking spray and put the ribs on the foil, leaving a little space between the ribs. Pour/brush the ribs with the barbecue sauce. Air fry the ribs at 360 degrees for 6-8 minutes or until they reach an internal temperature of 145 degrees (don't go much beyond that or the ribs will be tough). Let the ribs stand a few minutes before serving them.
Low Sugar Barbecue Sauce
3 ounces of tomato paste (half of a 6-ounce can or about 5 tablespoons)
1/3 cup of apple cider vinegar
1/4 teaspoon of pepper
1 teaspoon of onion powder
1/4 teaspoon of kosher salt
3-6 drops of liquid smoke
1/4 cup of date puree
1/8 teaspoon of garlic powder
1/4 cup of water
1/4 teaspoon of smoked paprika
1/2 teaspoon of Worcestershire sauce
Combine all of the ingredients in a small bowl and whisk them together well. Store the sauce, covered, in the refrigerator. Use the sauce to top meats and in recipes that call for barbecue sauce.
