How to Make an Easy, Low Carb, High Protein Bake/Casserole With a Bag of Coleslaw and Cottage Cheese (Diabetic Friendly)

This simple bake or casserole is quick to make, inexpensive, and loaded with nutritious ingredients. It's also really good, either as a main dish on its own or alongside meats. The bake starts with a bag of coleslaw mix for ease and to shorten the preparation time. With a little green onion, ham, and celery, the bake has plenty of flavor. Cottage cheese provides creaminess as well as extra protein. A little Parmesan, mozzarella, and cheddar cheese increase the flavor and protein in the dish. You can air fry the bake in 15-20 minutes, or bake it in a regular oven in about 25 minutes. Low in "bad" carbohydrates and high in protein and fiber, the bake is great if you're on a diabetic diet or want to "eat healthy." Enjoy!

Easy Coleslaw Bake -- Serves 6+ (2 pans, one 8" x 8" and one 5" x 8")


14 ounce bag of coleslaw mix with carrots included

1/4 cup of chopped celery

1/4 cup of chopped green onions

1/2 cup of diced ham (preferably lower sodium)

1 teaspoon of onion powder

1/2 teaspoon of garlic powder

1/4 teaspoon of salt

1/4 teaspoon of pepper

1 cup of cottage cheese (I use low-fat)

2 large eggs

2 tablespoons of grated Parmesan cheese

1/2 cup of shredded mozzarella cheese

1/2 cup of shredded cheddar cheese


Put the coleslaw mix and celery in a large microwave-safe bowl, add a tablespoon of water and microwave the vegetables for 5 minutes or until they soften. Stir in the green onions, ham, onion powder, garlic powder, salt, and pepper. Add the cottage cheese and mix it in well. Add the eggs and mix them in well. Add the Parmesan, mozzarella, and cheddar cheeses and mix them in until combined. Spritz an 8- x 8-inch pan and a 5- x 8-inch pan with non-stick cooking spray. Divide the coleslaw mixture between the two pans, smoothing out the tops.

Air fryer:  Air fry the casseroles at 335 degrees for 15-20 minutes or until the top is a deep golden brown.

Oven:  Preheat the oven to 350 degrees. Bake the casseroles for 25-30 minutes or until a deep golden brown.
