How to Make an Easy, Inexpensive, Savory Cottage Cheese Cake With Feta and Goat Cheese in Your Air Fryer (Diabetic Friendly)

This simple cottage cheese cake is quick to prepare in a food processor (or use a blender) and bakes in the air fryer in about 25 minutes. The cake is creamy, light, and tastes of feta and goat cheese. Green herbs--I use dill and parsley--add extra flavor. You can vary the cheeses that you add. In the version in the photo below, I used a mixture of feta and goat cheese, because that's what I had on hand, but you can use all of one or the other, if you prefer. You also can very the herbs you add to suit your taste. The cottage cheese cake makes a great appetizer, either warm, cold, or at room temperature. It's also great alongside or on top of a salad. The cottage cheese tastes quite rich, but it's high in protein and low in fat and "bad" carbohydrates. If you're on a diabetic diet or want to "eat healthy," the cottage cheese cake is a good option. Air Fryer Savory Cottage Cheese Cake With Feta and Goat Cheese (Diabetic Friendly) -- Serves 6+
1 1/2 cups of cottage cheese (I use low-fat)
2 large eggs
1/4 cup of feta cheese
1/4 cup of goat cheese
2 tablespoons of chopped, fresh herbs (I used a mixture of parsley and dill)
2 tablespoons of cornstarch
Add the cottage cheese to a large food processor or blender and process it until mostly smooth. Add the eggs and process them in. Add the feta, goat cheese, chopped herbs, and cornstarch and process them in until you have a smooth mixture. Spritz an 8-inch spring-form pan with non-stick cooking spray and line the bottom with a piece of baking parchment. Spritz the parchment with cooking spray. Pour the cottage cheese mixture into the prepared pan and smooth it out. You can tap the pan gently on the counter a couple of times to settle the mixture. Air fry the cottage cheese cake (use the "bake" setting if you have one) at 300 degrees for about 25 minutes. Let the cheese cake cool a little before removing the rim (run a plastic knife around the edges, first) and serving the cheese cake.
