This simple granola is full of good things and really tasty. You can make the granola in minutes, and it air fries in about 30 minutes. It beats out expensive store-bought granola any day. The granola is fairly soft (only a bit crispy on the edges), and it won't cause you to break a tooth! The granola includes lots of oats and sweet spices, and it's sweetened with date puree (see https://www.thenfeedthem.com/post/how-to-make-date-puree-and-why-you-should-especially-if-you-re-diabetic-or-cutting-back-on-sugar) and just a little molasses, not refined sugar. With plenty of fiber, protein, vitamins, and minerals, the granola is great if you're on a diabetic diet or want to "eat healthy." Although I don't usually add dried fruit to the granola, because it already includes date puree, feel free to add raisins, dried cranberries, dried ginger pieces, etc., but add them after you air fry or bake the granola (so they don't get too hard). We like the granola sprinkled on fruit and yogurt for a simple, nutritious breakfast. The granola also makes a nice "crumble" to top baked fruit. Want to give the granola for gifts? Gingerbread Granola -- Makes Two 8-inch Pans (6+ cups)
3 cups of rolled oats (Old Fashioned)
1/4 cup of oat flour (just grind oats in a food processor or blender)
1/4 cup of milled flax seeds
1/2 cup of pepitas (roasted pumpkin seed kernels)
2 cups of mixed, roasted, unsalted nuts (or use whatever type you like--pecans, walnuts,
hazelnuts, etc.)
1/2 teaspoon of salt
2 teaspoons of cinnamon
2 teaspoons of ginger
1/2 teaspoon of nutmeg
1/2 teaspoon of allspice
1/2 teaspoon of cloves
1/3 cup of canola oil
2/3 cup of date puree
2 teaspoons of vanilla
2 tablespoons of molasses
2 egg whites, beaten with a fork enough to break them up or until they are a bit frothy
Line two 8-inch square pans with aluminum foil and spritz the foil with non-stick cooking spray. In a large bowl combine/mix together well the oats, oat flour, milled flax seeds, pepitas, nuts, salt, and spices. Add to the bowl the oil, date puree, vanilla, and molasses and mix them into the dry ingredients until blended. Add the egg whites and mix them in well. Divide the mixture evenly between the two prepared pans and press it down well with a spatula.
Air Fryer: Air fry the granola at 285 degrees for 30-35 minutes or until a deep golden brown. Let the granola cool in the pan, then lift it out using the aluminum foil as a sling. Break the granola up into clumps and put it into air-tight containers or plastic bags to store it. It should keep for a few weeks in a cool place.
Oven: Preheat the oven to 300 degrees. Bake the granola for about 35 minutes or until a deep golden brown. Let the granola cool in the pan, then lift it out using the aluminum foil as a sling. Break the granola up into clumps and put it into air-tight containers or plastic bags to store it. It should keep for a few weeks in a cool place.
