How to Make an Easy, Inexpensive, Cottage Cheese, Swiss Cheese, and Zucchini Bake (Diabetic Friendly, Air Fryer or Oven)

This simple bake is full of good things and will help stretch your food budget while also keeping you well fed. The bake gets creaminess and a big protein boost from cottage cheese, and nutty Swiss (or Gruyere) cheese, mushrooms, and onions add a huge amount of flavor to the bake. Zucchini--you can shred it, chop it fine, or use spirals--keeps the carbohydrate count down. I usually make the "bake" in the air fryer, which gives it a nice, crispy top, and you can also bake the "bake" in the oven. The bake is great if you're on a diabetic diet or want to "eat healthy." We like the bake as a meatless main dish or as a substantial side dish. Enjoy!

Cottage Cheese, Swiss Cheese, and Zucchini Bake (Diabetic Friendly) -- Makes an 8 x 5" Pan
2 cups of finely chopped zucchini (or spiralize or shred it)
4 ounces of sliced mushrooms
1/2 a medium onion, chopped (about 1/2 cup)
1/4 teaspoon of garlic powder
1/4 teaspoon of salt
1/4 teaspoon of pepper
1 tablespoon of grated Parmesan cheese
1 cup of low-fat cottage cheese
2 large eggs
1/2 teaspoon of dried thyme
1/2 teaspoon of dried parsley
1/2 -2/3 cup of shredded Swiss or Gruyere cheese, divided
Put the zucchini, mushrooms, and onion in a large microwave safe bowl and microwave them together for 4-5 minutes to soften them. Stir in the garlic powder, salt, pepper, Parmesan cheese, and cottage cheese and mix everything well. Add the eggs, thyme, and parsley and mix them in until completely combined. Stir in half the Swiss cheese. Spritz a 5 x 8-inch pan well with non-stick cooking spray. Pour the mixture into the pan and sprinkle on the remaining cheese evenly, pressing the cheese into the mixture a bit. Air Fryer: Air fry the bake at 320 degrees for 25-30 minutes or until mostly set and a dark, crusty brown on top.
Oven: Preheat the oven to 350 degrees. Bake the "bake" for about 30 minutes or until mostly set and a dark, crusty brown on top.
Let the bake cool for at least 5 minutes before serving to let it firm up a bit.
