How to Make an Easy Cherry-Banana-Almond Cake in Your Air Fryer or Oven (Diabetic Friendly, Fruit-Sweetened, No Artificial Sweeteners)

This simple, one-bowl cake is quick to make and comes out of your air fryer or oven soft, moist, and delicious. The cake is sweetened primarily with fruit, not refined sugar or artificial sweeteners. With a mixture of almond flour and white whole-wheat flour, the cake is "worth eating" from the nutritional standpoint. It's rich in fiber, protein, and other nutrients. If you're on a diabetic diet or want to "eat healthy," the cake is great (in moderation, as always). How does the cake taste? It's good. You can taste the sweet bananas and tart cherries. The almond flavor complements the fruit, and sliced almonds on top of the cake provide a bit of crunch. The cake makes a nice, simple dessert on its own, or you can splurge and serve it with fluff of whipped cream or a small scoop of ice cream. Enjoy!

Cherry-Banana-Almond Cake (Diabetic Friendly) -- Makes an 8-inch Cake
1/4 cup of canola oil
1 large egg
1/4 cup of date puree (barely cover chopped, pitted dates with boiling water, let the
mixture cool, and mash it well with a fork or puree it in a mini food processor)
1 teaspoon of vanilla
1 very ripe medium/large banana, mashed
1/2 cup of chopped sour cherries (from a jar or can--juice saved)
1/4 cup of cherry juice
3/4 cup of almond flour
1/4 cup of white whole-wheat flour
1/4 teaspoon of salt
1 teaspoon of baking powder
1/4 - 1/3 of sliced almonds
Spritz an 8-inch square pan well with non-stick cooking spray (I use a disposable aluminum foil pan, which just fits in my air fryer). In a large bowl whisk together well the canola oil, egg, date puree, vanilla, and banana. Whisk in the cherry juice. Add to the bowl the almond flour, white whole-wheat flour, salt, and baking powder and stir them in with a spoon until combined. Stir in the chopped cherries until combined. Pour the batter into the prepared pan and smooth it out. Sprinkle the sliced almonds evenly on top of the batter.
Air Fryer: Preheat the air fryer to 325 degrees. Air fry the cake on the "bake setting" for 25-30 minutes or use the "air fry" setting at 320 degrees for about 25 minutes and cook the cake until it's golden brown on top and a pick inserted in the center of the cake comes out with no wet batter attached.
Oven: Preheat the oven to 350 degrees. Bake the cake for about 30 minutes or until golden brown on top and a pick inserted in the center of the cake comes out with no wet batter attached.
Store any leftover cake in the refrigerator.
