How to Make an Easy Broccoli Salad That's Lower in Calories and Diabetic Friendly

Unlike many of the broccoli salads that have been around for years, this one is more nutritious, lighter in calories, and better for you if you're on a diabetic diet or just want to "eat healthy." The salad also is really good! We especially like it for warm weather dinners. The salad is full of vegetables and gets its sweetness from mandarin oranges and a small amount of raisins (you can substitute dried cranberries or leave them out, if you prefer). Almonds provide crunch and extra protein to the salad. The salad is best made early in the day to give the flavors time to meld, and, if you want to make the salad a day or two ahead, it will keep fine in the refrigerator. Enjoy!

Easy, Lower Calorie Broccoli Salad (Diabetic Friendly) -- Serves 6+
1 pound of broccoli, washed well and cut into bite-size florets
1/2 cup of carrot shreds
1/2 cup of chopped celery
1/2 cup of chopped green onion
1/4 cup of apple cider vinegar
1/4 cup of light mayonnaise
1/2 cup of plain, non-fat yogurt (Greek or regular)
1/4 teaspoon of pepper (optional)
1/2 cup of feta cheese
1 large can of mandarin oranges (14-15 ounces) in juice, drained, but save the juice
1/2 cup of slivered almonds, toasted
1/4 cup of golden raisins (or use regular, black raisins or dried cranberries), optional
In a large bowl, whisk together the cider vinegar, light mayonnaise, yogurt, pepper, and 2-3 tablespoons of the reserved orange juice. Add the broccoli, carrots, celery, and onions and mix everything well. Gently stir in the feta cheese, mandarin oranges, almonds, and raisins. If you'd like a thinner dressing add a little more of the reserved orange juice. Refrigerate the salad for at least an hour and preferably 6-8 hours. Serve the salad "as is" or atop salad greens.
