How to Make a Quick, Easy, Inexpensive Weekend Breakfast: Air Fryer Spinach and Sun-Dried Tomato Mini Frittatas (Baked Omelets)

These frittatas are easy to make and bake in your air fryer in about 10 minutes, so you can have a special breakfast almost any time. Or serve the frittatas for lunch or for a light dinner with a salad. The frittatas are inexpensive to make, and they are far more "special" than scrambled eggs. I think the frittatas also are easier than omelets, because the air fryer does the work, and the frittatas, unlike omelets, require less monitoring. You can use only spinach in these frittatas, or, if you have other greens--arugula, chard, kale--feel free to add them in. I like to use Swiss cheese, but use what you have on hand. Cheddar or Colby-Jack both work well. What about the sun-dried tomatoes? They add concentrated flavor to the frittatas, but, if you don't have any, it's okay to omit them (or use some halved cherry tomatoes). Your frittata will be good, regardless! You'll need four mini pie tins, preferably non-stick, for the frittatas. Left overs keep well refrigerated in plastic containers, and the frittatas reheat in seconds in the microwave for a super-quick breakfast later in the week. Enjoy!

Air Fryer Spinach and Sun-Dried Tomato Mini Frittatas -- Makes 4


1/4 cup of chopped onion

2 tablespoons of milk

4 large eggs

1/4 teaspoon of salt

1/4 teaspoon of pepper

2 cups of fresh spinach, washed, dried, and chopped or torn into pieces (or use mixed

greens--spinach, kale, chard, arugula, etc.)

1/2 cup of shredded Swiss cheese

2 tablespoons of chopped sun-dried tomatoes


Spritz 4 mini pie tins well with non-stick cooking spray. Place the onion in a medium bowl and microwave it for about a minute or until it softens a bit. Add the milk, eggs, salt, and pepper to the onions and whisk everything well. Stir in the chopped spinach, the cheese, and the sun-dried tomatoes. Divide the mixture evenly among the pie tins. Place two (or more if your air fryer is large enough) filled pie tins in the air fryer basket, place the basket in the air fryer, and air fry the frittatas at 360 degrees for 8-12 minutes or until lightly browned and firm to the touch. Remove the frittatas from the basket to cool and repeat the cooking process with the remaining uncooked frittata mixture. Remove the frittatas from the mini tins to serve them or just serve them in the tins.
