How to Make 15 Minute, Three Ingredient Artichoke Antipasto Tilapia--Air Fryer or Oven

Okay, so most of the time, I cook from scratch, but, sometimes, I just don't want to bother. Even going out is too much trouble (not to mention expense). That's when a quick-to-fix dinner is good. And by quick, I mean a couple of minutes. Artichoke Antipasto Tilapia may sound weird, but it's good. The three-ingredient dish--which you make with part of a jar of Trader Joe's artichoke antipasto (or whatever brand you prefer/can find)--bakes in about 15 minutes, and it tastes like something you'd find at a restaurant. Serve it with a green salad and perhaps some brown rice or nice sourdough or garlic bread. Enjoy!

Artichoke Antipasto Tilapia -- Serves 2

2 tilapia fillets (about 12 ounces)

1/2 cup of Artichoke Antipasto (I use Trader Joe's)

1/4 - 1/2 cup of seasoned panko breadcrumbs

Oven: Preheat the oven to 400 degrees and coat a baking sheet with non-stick cooking spray or line the baking sheet with foil and spray the foil. Lay the tilapia fillets on the baking sheet. Spread the artichoke antipasto evenly over each fillet, then sprinkle the panko evenly over the antipasto. Bake the fillets for about 15 minutes or until the topping is golden and the fish flakes easily with a fork.


Air Fryer: Line the bottom of your air fryer basket and an inch or two up the sides with a piece of aluminum foil. Spritz the foil with non-stick cooking spray. Lay the tilapia on the foil. Spread the artichoke antipasto evenly over each fillet, then sprinkle the panko evenly over the antipasto. Air fry the tilapia at 360 degree for 10-15 minutes or until the topping is golden and the fish flakes easily with a fork.
