How to Cook a Small, Simple Boneless Lamb Loin Roast in Your Air Fryer

Cooking a small lamb loin roast in the air fryer is easy, quick, and less messy than baking the roast in the oven. You don't need to brown the roast before air frying it, and the lamb comes out of the air fryer with a great crust and moist, tender, and delicious. I use a pre-tied boneless roast--usually the "Aldi special" version. If your roast isn't tied, you can tie the roast in several places with kitchen string to ensure the roast keeps its shape. A simple spice mixture is all you need to season the lamb, as you want the flavor of the meat to shine through. I usually cook the lamb for 20-25 minutes until it reaches an internal temperature of about 145 degrees, which is on the medium side of doneness. If you'd like rarer meat, just decrease the cook time. I don't recommend cooking the lamb much beyond 145 degrees, or you risk it becoming tough. For us a lamb roast is a special occasion dinner, and this version fits the bill nicely. It's easy on the cook, quick to do, and it really, really tastes great for something so simple. We like the lamb with asparagus and roasted potatoes alongside. Enjoy!

How to Cook a Simple Boneless Lamb Loin Roast in Your Air Fryer

Air Fryer Boneless Lamb Loin Roast -- Serves 4


1 1/2 - 2 pound boneless lamb roast, tied to hold it together

1/2 teaspoon of onion powder

1/2 teaspoon of garlic powder

1/2 teaspoon of sweet paprika

1/4 - 1/2 teaspoon of salt

1/4 teaspoon of pepper

1 tablespoon of chopped fresh rosemary (or use 2 teaspoons of dried)

1 - 2 tablespoons of olive oil


Cut a sheet of aluminum foil (I use heavy duty foil or double up regular foil to make it easier to lift the lamb out later without accidents) to fit the bottom of your air fryer basket and an inch or two up the sides. Spritz the foil well with non-stick cooking spray. Pat the roast dry with a paper towel and place it on the prepared foil. In a cup combine the onion powder, garlic powder, paprika, salt, pepper, rosemary, and oil and mix them together well to form a paste. Coat the lamb with the paste. Air fry the lamb at 360 degrees for 20-25 minutes or until the lamb reaches an internal temperature of about 145 degrees. Remove the lamb from the air fryer, tent it with foil, and let it rest for 10-15 minutes before removing the string and slicing it.
