How to Cook a Simple, Easy Pork Tenderloin in the Air Fryer (Diabetic Friendly)

Pork tenderloins are easy to cook in the air fryer in about 20 minutes, and they come out nicely browned on the outside and tender inside. Pork tenderloins--which have been on sale at several markets in our area--also are considerably less expensive than beef (ground beef is now running about nine dollars a pound!!! Wow!) Lean, and full of protein, the tenderloins also are great if you're on a diabetic diet or want to "eat healthy." The recipe I'm posting below is simple. You simply sprinkle some spices over half a tenderloin, spritz it well with olive oil, and air fry it. The result, in my view, is better than baking the tenderloin in the oven--both better tasting and faster. Enjoy!

Simple, Easy Air Fryer Pork Tenderloin (Diabetic Friendly) -- Serves 4


Half a pork tenderloin (they usually come in a package with two pieces--just use one

and save the other for something else or double the recipe and cook both pieces

separately), about a pound

1/2 teaspoon of salt

1/4 teaspoon of pepper

1/2 teaspoon of coriander

1/2 teaspoon of sweet paprika

1/4 teaspoon of garlic powder

1/2 teaspoon of onion powder

1 teaspoon of dried parsley

Olive oil


Pat the pork dry with a paper towel and, if necessary, use a sharp knife or kitchen shears to trim off the whitish "silver skin" on the outside of the tenderloin. No, you don't have to do that, but trimming the silver skin will help the pork cook better. In a small bowl or cup combine all the spices and sprinkle the outside of the pork on all sides with the spice mixture. Spritz or drizzle the pork on all sides with the olive oil. Put the pork in a pan or on a piece of aluminum foil spritzed with non-stick cooking spray. If necessary (i.e., your air fryer is on the small side), you can cut the pork into two pieces. Air fry the pork at 385 degrees for 15-20 minutes or until it reaches an internal temperature of 145 degrees (if you cook it much beyond that it will be tough). Remove the pork from the air fryer and tent it with aluminum foil. Let the pork rest for at least 10 minutes before slicing it across the grain.
