These cookies are just the thing if you have a cookie craving and don't want to leave the house. You can have a small batch of cookies in about 15 minutes. You also don't need a lot of strange ingredients. The most unusual ingredient in the cookies is Nutella or "Hazelnut Spread," if you use the generic version, which is fine. The cookies are a little puffy and nicely moist inside (assuming you don't over cook them). Crumbled graham crackers give the cookies a slight crunch. I think the cookies are best fresh baked, so I often bake a half dozen and then stash the remainder of dough in the refrigerator to bake the next time a cookie craving hits. You may need to give the cold dough a minute or two longer when you bake it. Enjoy!
Air Fryer Nutella Crunch Cookies -- Makes 12+
1/2 cup of Nutella or similar hazelnut-chocolate spread (about half a 13-ounce jar)
2 large eggs
1 cup of flour
1/4 teaspoon of baking soda
1/4 teaspoon of baking powder
1 sleeve of graham crackers, crumbled, with some small and some bigger pieces (1- 1 1/2 cups)
Cut small pieces of baking parchment large enough to fit inside your air fryer basket. In a medium bowl, combine the Nutella and eggs and beat them together well. Stir in the flour, baking soda, and baking powder until combined. Fold in the crumbled up graham crackers. Drop several 1 1/2 tablespoon scoops of dough onto each piece of parchment paper, spacing the cookies and inch or two apart, if possible. Flatten the cookies a little with your palm (so they don't roll). Put one dough-topped piece of parchment into the air fryer basket, put the basket into the air fryer, and air fry the cookies at 320 for 8-10 minutes or until puffed and just barely set. Remove the baked cookies to cool and repeat the cooking process with the remaining dough.
