Easy Air Fryer or Oven Salmon With Orange-Coriander Topping

This is one of the easiest ways to cook salmon that I know. Simply dust some salmon fillets with a mixture of orange rind and coriander powder. Then drizzle on a topping of honey and orange juice. The orange-honey mixture provides sweetness and tang to the salmon as well as giving it lovely golden top. The dish is simple to put together, even on a weeknight, and the salmon cooks in the air fryer in 15-20 minutes. Want to use the regular oven? You can do that, too. I usually serve the fish with rice, a green vegetable, and a salad, all of which can be prepared in the time it takes the fish to cook. Enjoy!

Air Fryer or Oven Orange-Coriander Salmon -- Serves 2

1 salmon filet, about 8-12 ounces

Grated zest of an orange

1 teaspoon of ground coriander

1/4 teaspoon of salt

Pinch of pepper, if you like

Olive oil

3 tablespoons of orange juice

1 tablespoon of honey

Coat with non-stick cooking spray a small piece of aluminum foil large enough to fit in your air fryer basket and a couple of inches up the sides of the basket. Fit the foil into your air fryer basket. Pat the salmon filet dry with paper towels and place it, skin side down, on the foil in the basket. Combine the orange zest, coriander, salt, and pepper and then rub them onto the fish. Spritz the fish with olive oil (I use a misto with olive oil in it, but you can drizzle the oil lightly over the fish, if you prefer). Mix together in a cup the orange juice and honey and drizzle the fish with half of the mixture. Put the air fryer basket in the air fryer and cook the fish at 360 degrees for 10 minutes. Drizzle on the remainder of the juice/honey mixture and cook the fish for another 3-5 minutes or until the fish is cooked to your liking (I usually cook our salmon for about 15 minutes because we like the fish medium-well done). Let the fish stand for 5 minutes before serving it. If you want to cook the salmon in the regular oven, preheat the oven to 375 degrees. Bake the fish for about 10 minutes, then drizzle on the remainder o the orange/honey mixture and return the fish to the oven for another 5-8 minutes or until the fish is cooked through to your liking. Let the fish stand for 5 minutes before serving it.
