Air Fryer/Oven Cookies Without Butter? Yes! Chocolate Avocado Dreams

In a medium bowl, whisk or beat together the avocado puree, egg, oil, sugar, vanilla, cocoa powder, and sugar. Stir in the flour, salt, and baking soda until combined. Fold in the chocolate chips. Drop 1 1/2 tablespoon mounds of batter/dough onto the parchment paper, three mounds to a sheet of parchment and spaced at least an inch apart. Flatten the mounds slightly with your fingers and sprinkle them with a bit of sugar. Are you looking for a cookie without the saturated fat of butter? Or maybe you can't do milk products? Or has that avocado been sitting too long on your counter and has reached the ultra squishy stage? Well, Chocolate Avocado Dreams are the cookies for you! The cookies are rich with cocoa flavor, soft, and a just a bit squishy in the middles--not quite brownie-like, but close. The moisture and fat in the cookies comes primarily from a ripe avocado, not butter. And, no, you can't taste the avocado. I think the predominant flavor of the cookie is chocolate, which it should be, as it's a chocolate cookie. The cookies are mildly sweet with chocolate chips scattered through them for intense hits of chocolate. I like dark chocolate chips, but use what you like or have on hand. You might even try the cookies with mint chocolate chips for St. Patrick's Day! Go green in multiple ways! Enjoy!

Air Fryer or Oven Chocolate Avocado Dream Cookies -- Makes 15+

1 very, very ripe medium avocado, pureed or mashed really well (about 2/3 of a cup)

1 large egg

2 tablespoons of canola oil

1/2 cup of dark brown sugar

1/2 teaspoon of vanilla

1/4 cup of cocoa powder

2 tablespoons of sugar

3/4 cup of flour

1/4 teaspoon of salt

1/2 teaspoon of baking soda

1/2 - 2/3 cup of chocolate chips

Sugar to sprinkle

Air Fryer: Cut pieces of parchment to fit your air fryer basket. Put one dough-topped piece of parchment in your air fryer basket, put the basket in the air fryer, and air fry the dough at 320 degrees for 8-10 minutes or until the cookies are puffed and just barely set. Remove the cookies from the air fryer to cool and repeat the cooking process with the remaining dough. Alternatively, you can make as many cookies as you want and refrigerate the remaining dough in a plastic or other container to bake another day.

Oven: Line baking sheets with parchment paper and preheat the oven to 350 degrees. In a medium bowl, whisk or beat together the avocado puree, egg, oil, sugar, vanilla, cocoa powder, and sugar. Stir in the flour, salt, and baking soda until combined. Fold in the chocolate chips. Drop 1 1/2 tablespoon mounds of batter/dough onto the parchment paper, spacing the mounds at least an inch apart. Flatten the mounds slightly with your fingers and sprinkle them with a bit of sugar. Bake the dough for 10-13 minutes or until the cookies are puffed and just barely set. Let the cookies cool a few minutes before removing them from the baking sheet to cool completely.
