Air Fryer Hot Milk Cake With Coconut Topping

This is a simple, easy recipe you can make in your air fryer in about 30 minutes. The cake is light, and the topping--full of brown sugar, nuts, and coconut--is what takes the dessert from plain to fancy. I especially like the recipe because the cake is small. It's just right for dessert for four people or for two with some left over. The cake is great warm from the air fryer, and, if you do have some left over, try heating it up again in the air fryer for a few minutes at 250-300 degrees. Why? Well, it's better that way, plus, the warm cake just goes better with ice cream oozing alongside it! Is there a mistake in the recipe? Nope. The cake part of the recipe includes no butter or oil! That's correct! There is, however, butter in the topping, so not to worry!

Air Fryer Hot Milk Cake With Coconut Topping -- Makes a 6-inch Round Cake


1/4 cup of milk, heated until hot in the microwave (30-45 seconds)

2 large eggs

1/2 teaspoon of vanilla

1/2 cup of sugar

1/2 cup of flour

1/2 teaspoon of baking powder

1/8 teaspoon of salt


Topping


1/4 cup of brown sugar

1/4 cup of nuts (pecans or walnuts are great)

1 tablespoon of butter, softened or melted

1 tablespoon of milk

1/2 cup of shredded coconut

1/2 teaspoon of vanilla

1/2 teaspoon of cinnamon


Spritz a 6 x 2-inch round baking pan with non-stick cooking spray. In a medium bowl, whisk together the eggs, vanilla, and sugar well. Whisk in half the milk. Whisk in the flour, baking powder, and salt, then whisk in the remaining milk. Pour the batter into the prepared pan and place the pan in the air fryer basket. Cook the cake at 320 degrees for 15 minutes. While the cake is in the air fryer, mix together (you can use the same bowl you used for the cake batter) the brown sugar, nuts, butter, milk, coconut, vanilla, and cinnamon until combined. When the cake has been in the air fryer about 15 minutes (it should look almost done), spoon on the topping ingredients. Return the cake to the air fryer and set the heat at 360 degrees. Cook the cake for 3-6 minutes longer or until the topping is brown and bubbly. Remove the cake from the air fryer and let it cool for at least 5 minutes before trying to remove it from its pan or serving it, preferably with ice cream alongside.
