Air Fryer Eggs: Quick Caprese


So, are you stumped for something good, cheap, and quick to fix for breakfast? Try Egg Caprese in the air fryer. The dish is simple, nutritious, and delicious. It also cooks in about 10 minutes, plenty of time to make your coffee, fix some fruit or pour your juice, and toast your bread (sourdough is good!). Although the recipe serves one, you can easily double it for two people. What you'll have when the air fryer dings is a delectable hot breakfast in a dish--warm savory tomato, protein-rich baked egg, and plenty of fresh, toasty, melted mozzarella oozing over the top. Add a few leaves of basil, and you've got an easy gourmet breakfast.

Air Fryer Quick Egg Caprese Recipe

Quick Egg Caprese -- Serves 1

1-2 slices of fresh tomato (about 1/2-inch thick)

1/8 teaspoon of Italian herbs or seasoning

1 egg

1/8 teaspoon of onion powder

pinch of salt and pepper (optional)

1 1/2-inch-thick slice of fresh mozzarella (about 3 inches round)

2-3 basil leaves

Coat a 4-inch ramekin with non-stick cooking spray and preheat the air fryer to 360 degrees. Put the tomato slices in the bottom of the ramekin and sprinkle on the Italian herbs. Break the egg open and slide it onto the tomato slice. Sprinkle the egg with the onion powder and salt and pepper, if you like. Lay the slice of mozzarella on top of the egg. Put the ramekin in the air fryer basket (carefully, the basket is hot!). Cook the caprese for 7-10 minutes or until the egg is cooked to your liking (soft in the middle or hard) and the cheese has melted and has browned a bit on top. Remove the ramekin from the air fryer and let the dish cool a few minutes. Sprinkle on the basil leaves and serve the Egg Caprese. You can serve it in the ramekin or just slip it out onto your plate. Or, if you like, toast an English muffin half, and slip the egg caprese on top! Yum, yum, yum!
