Make Mini Carrot and Raisin Bran Breads in Your Air Fryer in 20 Minutes

These mini breads are great tasting, easy to make, and air fry in about 20 minutes. You won't need weird, expensive ingredients, just items you're likely to have in your kitchen. The breads are moist, full of flavor, and lightly spiced with cinnamon, cloves, and ginger. I like to top the breads with broken walnuts, which toast on top of the breads in the air fryer and give the breads additional flavor and crunch. You can leave the nuts off, if you'd prefer, and the breads will be good, regardless. The raisin bran in the batter gives the breads additional texture and fiber, and the raisins add extra sweetness. The breads are great for breakfast, snacks, and a less-sweet dessert. Enjoy!

Air Fryer Carrot and Raisin Bran Bread -- Makes 2 Mini Loaves


1/4 cup of canola oil

1 large egg

1/2 cup of plain yogurt (low-fat or fat-free is fine)

1/3 cup of dark brown sugar

3/4 cup of flour

1/2 cup of raisin bran

3/4 teaspoon of baking powder

1/4 teaspoon of salt

1/4 teaspoon of baking soda

1/2 teaspoon of cinnamon

1/4 teaspoon of cloves

1/4 teaspoon of ginger

1 cup of shredded carrot

1/2 - 3/4 cup of broken walnuts (or use pecans, etc.), optional

Sugar to sprinkle (optional)


In a medium bowl whisk together well the oil, egg, yogurt, and brown sugar. Stir in the flour, raisin bran, baking powder, salt, baking soda, and spices until just combined. Stir in the shredded carrot. Spritz two mini-loaf pans with non-stick cooking spray and divide the batter between the pans. If you'd like, sprinkle half the nuts over the batter in each pan. Sprinkle a little sugar over the batter in each pan, if you'd like (about a teaspoon for each pan). Spritz the top of the batter in each pan with a little non-stick cooking spray (this will help hold the sugar/nuts in place and keep them from burning). Put the pans in your air fryer basket, put the basket in the air fryer, and air fry the batter at 320 degrees for 15-20 minutes or until a pick inserted in the center of a loaf comes out with no wet batter attached. Remove the pans from the air fryer and let the breads cool in the pans for 10 minutes before turning them out to cool completely.
